During the festival of Diwali, sweets play a special role, as people share joy by treating each other with desserts. During festive periods, the demand for sweets in stores increases, which affects their price. If you prefer homemade baking over store-bought, you can prepare the famous Bengali sweet Chamcham at home for this Diwali.
The sweet Chamcham is very tasty, and it is not difficult to make at home. For this, you will need milk, sugar, lemon, coconut, and some dried fruits. It is important to note that you can decorate it with a creamy layer or coconut glaze according to your taste. Below is a simple recipe for making Chamcham as delicious as professional confectioners' versions.
For preparing the curd mass (chena):
For preparing the syrup:
For filling and decoration:
First, you need to prepare the chena. Bring the milk to a boil in a deep pot. As soon as the milk boils, turn off the heat. Then, slowly pour the water mixed with lemon juice into the milk while stirring gently and constantly. After some time, the milk will curdle, and water will start to separate. Strain this mixture through cheesecloth and rinse it with cold water to remove the sourness of the lemon. Tie the cloth and hang it for 30 minutes.
The curd mass needs to be kneaded well. Take the chena out onto a large plate and thoroughly mash it with your palms for 8–10 minutes. Make sure there are no lumps left, and the chena becomes completely soft. Then, divide it into small pieces and shape them like an elongated egg.
In a large, deep pot, heat the sugar and water. Add cardamom and cook until the sugar is completely dissolved. When the syrup starts to boil vigorously, add the prepared Chamcham pieces. Cover the pot with a lid and cook over high heat for about 12–15 minutes. You can occasionally add a little hot water if needed. During cooking, the size of the Chamcham will increase. After this, turn off the heat and let them cool directly in the syrup so that the sweetness penetrates evenly inside.
Preparing a tasty filling. In a bowl, mix the mawa and crushed sugar. Add finely chopped almonds and pistachios. Then, take the cooled Chamcham out of the syrup, make a small incision in the middle, and fill it with the buttery mixture.
Coconut and dried fruit decoration. Finally, roll the Chamcham in dry coconut. Decorate it with sliced almonds, pistachios, and saffron.
