Kaju Katli is a favorite dessert during festivals such as Diwali and Bhai Dooj, evoking an appetite just by being mentioned. However, there is a risk that commercially available Kaju Katli may be expensive and contain impurities, such as peanut powder or aroite.
Instead of buying imitation sweets for holidays, it is recommended to make pure and delicious saffron Kaju Katli at home, using only cashews and saffron. This dessert is not only delicious but also healthy.
The following ingredients are required for preparation: 250 grams of cashews (whole or ground, peeled), 1 cup of sugar, half a cup of water, 15-20 strands of saffron (soaked in one teaspoon of warm milk), one teaspoon of pure ghee, and optionally, silver foil for decoration.
When grinding the cashews, use the pulse function of the mixer, not continuous rotation. Continuous use will cause the cashews to release oil, making the paste wet. It is also important that the syrup for Kaju Katli has only one consistency; if it thickens too much, the sweet can become hard.
First, grind the cashews in a blender using the pulse function until a fine powder is obtained, which can then be sifted through a sieve to remove large particles. Next, heat 1 cup of sugar and half a cup of water in a heat-resistant pan, bring to a boil until the sugar is completely dissolved and a syrup of one consistency forms.
After this, add the milk with saffron to the boiling syrup, which will give the syrup a light yellow hue and a wonderful aroma. The heat must be reduced to a minimum, and the ground cashew powder should be gradually added to the syrup while stirring constantly to prevent lumps from forming.
The mixture needs to cook until it starts to pull away from the sides of the pan and forms a smooth mass. Add one teaspoon of ghee and mix thoroughly, then turn off the heat. Pour the hot mixture onto parchment paper or a plastic sheet. When the mass cools slightly to a temperature that allows it to be touched by hand, knead it until it is absolutely smooth and soft, like dough.
Next, place the mass between layers of parchment paper and roll it out evenly with a rolling pin. Apply silver foil on top. After the dessert cools, cut it into diamond shapes characteristic of Kaju Katli. The resulting pure and royal saffron Kaju Katli is ready to be stored in an airtight container and served to guests on holidays.
