Masala fried fish is a popular choice for a hearty dish that acquires a golden color when fried, thanks to its aromatic marinade mixture. This dish is versatile: it can be served as an appetizer or alongside rice and dal for a complete family dinner.
The key to the success of this recipe is to allow the fish enough time to fully absorb the spices before placing it in the pan. This recipe uses a simple combination of coriander (dhania), cumin (jeera), Kashmiri masala, turmeric, garlic, and curry leaves, while lemon juice adds a pleasant tanginess.
Any firm white fish is suitable for preparation. The fish can be prepared in advance and left to marinate in the refrigerator, making this option convenient for a dish requiring minimal preparation right before serving.
Masala Fried Fish Recipe
Ingredients
- 2 large fish fillets (500 g), such as hake, kingklip, or other firm white fish.
- 2 teaspoons of ground coriander (dhania) and cumin (jeera).
- 2 tablespoons of Kashmiri masala.
- ½ teaspoon of turmeric.
- 1 teaspoon of minced garlic.
- 8–10 curry leaves.
- 4 tablespoons of olive oil.
- Juice of 1 lemon.
- ½ teaspoon of salt.
- ½ teaspoon of black pepper.
- 125 ml of water.
- Vegetable oil for frying.
Cooking Instructions
First, pat the fish fillets dry with a paper towel and set aside. In a bowl, mix the ground coriander and cumin, Kashmiri masala, turmeric, minced garlic, curry leaves, olive oil, lemon juice, salt, and pepper.
Gradually add water while stirring constantly until a thick spice paste forms. Rub both sides of the fish with the marinade, ensuring the fillet is evenly coated. Place the fish in a covered container and refrigerate for one to two hours to allow the aromas to develop.
Heat a thin layer of oil in a pan over medium heat. Carefully place the marinated fish into the hot oil. Fry until golden brown on the bottom, then carefully flip and cook the second side until golden brown and the fish is fully cooked. Cooking time will depend on the thickness of the fillet. After removing the fish from the heat, let it rest for about five minutes before serving.
How to Prevent Fish from Falling Apart
Fish can be delicate, especially after marinating and coating with spices. Several simple steps will help keep the fillet intact during frying:
- Choose firm fish: Fish with firm flesh is suitable for small frying. Small whole fish can also be used.
- Pat the fish dry: Excess moisture can prevent the marinade from adhering properly.
- Do not move the fish too early: Allow the bottom side to form a golden crust before attempting to flip it.
- Use a wide spatula: Gently lift the fish from underneath to support the fillet when turning it.
- Maintain moderate heat: Oil that is too hot can burn the spices before the fish cooks, while oil that is not hot enough will make the fish greasy.
