Gujarati Gathiya Lentil Lasagna Recipe: How to Make Crispy Snack Based on Chickpea Flour and Garlic

The famous Gujarati Gathiya lasagna is known for its very tasty and wonderful flavor. It is easy to prepare at home using chickpea flour, and serving it to guests will surely evoke admiration.

During the festive season, guests often visit homes, and instead of buying expensive savory snacks and mataris from the store, you can make the famous Gujarati Gathiya lasagna yourself. Residents of Gujarat enjoy eating this crispy and spicy snack with tea during evening refreshments. Preparing this Gathiya lasagna does not require much effort, and it can be stored in advance for Diwali celebrations, after which guests will ask for the recipe themselves.

Gujarati Gathiya Lasagna Recipe:

The following ingredients are needed for preparation: 8-10 cloves of garlic (or garlic powder/minced paste), 1 teaspoon of Kashmiri red chili powder (for good color and spiciness), 1/2 teaspoon of ajwain (rubbed with hands), a pinch of hing, 1/4 teaspoon of baking soda (food-grade soda), 2-3 tablespoons of oil (for greasing and frying), salt to taste, and water as needed for kneading the dough.

The process of making Gathiya lasagna begins with grinding the garlic cloves, Kashmiri red chili, ajwain, hing, and water in a blender until a paste is formed. Then, in another bowl, sift the chickpea flour and mix it with salt, baking soda, and 2-3 tablespoons of hot oil. The prepared garlic and chili paste is added to this mixture, and then, adding a little water, the dough is thoroughly mixed until it becomes light and fluffy.

After that, the oil in the pan is heated over medium heat for frying the gathiyas. The oiled mold cup is greased with oil, then the chickpea mixture is poured into the mold and spread by rotating to form the gathiya. The gathiya can be dropped directly into the hot oil or placed on a plate, but the latter may cause them to stick together. The gathiyas are deep-fried in oil until golden and crispy, then removed and placed on a plate.

To preserve the Gathiya lasagna, once they have completely cooled, they need to be broken up by hand into the shape of savory snacks. After that, they are packed in an airtight container. When guests arrive, they should be served with tea; their spicy and tangy flavor is very popular with people.

This local snack is made from corn flour and yogurt (chaach), and the addition of ghee and spices significantly enhances its flavor. Preparing this dish at home does not require much effort, and it can be served hot.

If you want to eat something tasty but easy on the stomach in the morning, you can try the traditional Rajasthani dish—corn flour rab. In some regions of North India, it is also known as maize mahari. It is made from corn flour and chaach. In the rural areas of Rajasthan, it is especially enjoyed during winter. It is quite simple to prepare, and all the necessary ingredients are easy to find at home.

To prepare rab, take corn flour into a pot and gradually mix in a little chaach, stirring thoroughly so that no lumps form in the mixture. Then, add the remaining chaach and one or two bowls of water, mixing the mixture well.

After this, place the pot on medium heat and stir constantly so that the mixture does not burn to the bottom and lumps do not form. When the mixture starts to boil, reduce the heat. Then, cook the dish for about 15–20 minutes, stirring occasionally. When the solution is completely cooked and has become slightly thicker, add salt to taste and roasted cumin powder.

To give rab an aroma, heat ghee in a small pan. Add whole cumin, asafoetida, and the chosen red or green chili. As soon as the cumin starts sizzling, pour this flavored fat into the rab and mix thoroughly. Finally, sprinkle with finely chopped fresh coriander on top. The ready traditional Rajasthani rab is ready to be served hot for breakfast.
