If you are tired of monotonous breakfasts like cereal, porridge, or bread, try making lentil rolls with paneer cheese. This snack combines a crunchy lentil base with a filling of spicy soft paneer cheese, making it both tasty and satisfying. It can be prepared for breakfast or as a light evening snack.
The specialty of this dish is that its preparation does not require any expensive or rare ingredients; soaked lentils and paneer cheese are enough to easily make rolls at home. They are suitable for a children's lunch as well as an excellent snack for adults with tea. A simple preparation instruction is provided below.
Ingredients and Method for Lentil and Paneer Cheese Rolls
First, you need to soak the lentils overnight or for 2-3 hours, then drain the water and place them in a blender. Add green pepper, garlic, ginger, and a little salt to the blender, then blend until it reaches a paste consistency. It is important to ensure that the dough is neither too runny nor too thick. The resulting mixture should be transferred to a bowl and thoroughly mixed.
After preparing the lentil dough, set it aside. Then, cut the paneer cheese into long and relatively thick strips. Arrange these strips on a plate or in a bowl and sprinkle with red chili pepper and other favorite spices.
Gently mix the cheese so that the spices are evenly distributed over the entire surface. This will give the cheese inside the roll an even richer flavor.
Heat a non-stick pan and grease it with a small amount of oil or ghee. Place the prepared lentil dough onto the pan and use a spoon to spread it into a shape resembling a slightly elongated oval. Do not make it too thick so that the roll can be easily rolled up.
Fry the lentil base with a small amount of ghee on both sides until lightly golden brown, but avoid excessive crispiness. Then, place one strip of spicy paneer cheese in the center of the lentil base and wrap it up. Drizzle a little oil or ghee over the roll and carefully flip it until the outer lentil shell becomes golden and slightly crispy.
During this process, avoid high heat; slow cooking over medium heat allows the lentil base to cook through well while keeping the cheese inside soft. When the rolls are fully cooked, remove them from the pan and let them cool slightly. Then, cut them into pieces of appropriate size. Serve hot, garnished with fresh cilantro and served with green or sweet ginger chutney.
