How to Make Crispy and Spicy Ragi Chips at Home

If you crave something crunchy and tasty with tea in the evening, people often buy potato chips or wheat flour snacks from stores. However, instead of these unhealthy and unhygienic snacks, making super healthy and crispy ragi chips at home will provide not only flavor but also numerous health benefits.

Ragi, also known as maddu or nachni, is considered an excellent source of calcium, fiber, and iron, which is especially beneficial for children's development, weight loss, and people with diabetes. Sometimes there are issues with ragi flour: due to the lack of gluten, it can crumble when rolled out or turn out hard instead of crispy. To make your chips as thin, crispy, and aromatic as store-bought ones, you need to prepare the dough by cooking the flour in hot water and adding a little rice flour or semolina.

How to Make Ragi Chips

The following ingredients are needed for preparation:

Dough Ingredients:

  • 1 cup of ragi flour (nachni flour)
  • 2 tablespoons of rice flour or fine semolina (for extra crispiness)
  • 1 cup of water (for boiling)
  • 1 teaspoon of white cumin, 1/2 teaspoon of fennel (crushed by hand)
  • 1/2 teaspoon of curry powder, 1/4 teaspoon of turmeric
  • 1 tablespoon of oil or ghee (for greasing)
  • Salt to taste

Spicy Magic Seasoning (for sprinkling on top):

  • 1/2 teaspoon of chaat masala
  • 1/2 teaspoon of roasted cumin
  • 1/4 teaspoon of amchur powder or peri-peri
  • 1/4 teaspoon of black salt

To begin, bring 1 cup of water to a boil in a saucepan. Add salt, 1 teaspoon of oil, fennel, cumin, curry powder, and turmeric to this water. When the water starts boiling, reduce the heat and gradually stir in the ragi flour and rice flour, mixing thoroughly. Then turn off the heat and cover the saucepan with a lid for 5 minutes. The steam helps the ragi flour become soft and provides good binding ability to the dough, so it doesn't fall apart when rolling.

After five minutes, transfer the dough to a wide bowl. When the dough becomes slightly warm (so that it can be touched by hand), knead it for 3-4 minutes, lightly greasing your hands with oil until you get a smooth and soft dough.

Form small balls from the dough. These balls are either placed between two parchment sheets or coated with dry rice flour to be rolled out very thinly. The thinner the sheet is rolled, the crispier the chips will be.

The rolled sheet must be pricked several times with a fork so that the chips do not puff up like donuts while frying. Then, cut it into triangular or rectangular pieces using a knife or cookie cutter.

Frying or Baking Methods

For frying: heat oil in a deep pan over medium heat. Fry the cut chips over medium or low heat for 3-4 minutes until they are crispy on both sides.

For baking: bake the chips in a preheated air fryer or oven at 180°C for 10-12 minutes.

Place the hot chips in a bowl and immediately sprinkle with the prepared chaat masala and peri-peri mixture, then mix. The chips need to cool completely. The finished crispy and spicy chips can be stored in an airtight container for up to 1 month.

How to make homemade Gulab Jamuns that are soft and juicy like in a confectionery

During festivals and joyous occasions, the enjoyment of hot, juicy, and tender Gulab Jamuns significantly enhances the festive atmosphere. However, when making poppy seed Gulab Jamuns at home, problems often arise: they may crack when dipped in oil or ghee, burn on the outside while remaining raw or hard inside. Furthermore, after soaking in syrup, they might absorb the juice poorly, leaving a hard lump in the center.

If you encounter such difficulties, there is no need to worry. By adhering to precise proportions of dry milk (mawa) and flour, using a little grated soft cottage cheese, and controlling the oil temperature during frying, you can prepare Gulab Jamuns that are no less fluffy, round, and juicy than store-bought ones. Below is the exact recipe for their preparation.

Gulab Jamun Preparation Tips:

Ingredients for the dough (mixture):

The dough requires 250 grams of pure mawa (dry milk, grated or crushed by hand), 50 grams of fresh cottage cheese/chhana (grated, as a secret ingredient for softness), 3-4 tablespoons of flour (for binding), a quarter teaspoon of baking powder (not soda), half a teaspoon of cardamom powder, and clarified butter (desi ghee) or refined oil for frying.

Ingredients for the syrup:

The syrup is made from 2 cups of sugar, 2 cups of water, 4-5 crushed green cardamoms, 7-8 strands of saffron, and 1 teaspoon of rose or cedar water.

Syrup Preparation

In a deep pot, mix 2 cups of sugar and 2 cups of water and place it on the stove. Add the crushed cardamom and saffron. After the sugar is completely dissolved, simmer over medium heat for 5-6 minutes. It is important not to achieve a syrup with one or two crystals; it should be slightly sticky, similar to honey. Turn off the heat, add the rose water, and cover to steep.

Preparing Mawa and Cottage Cheese

Take the grated mawa and cottage cheese onto a wide plate. Gently knead the mixture with the back of your palm for 5-7 minutes until the mass becomes absolutely smooth, creamy, and velvety. There should be no grains left in the mixture.

Adding Flour and Checking the Dough

Add the flour, baking powder, and cardamom powder to the kneaded mass. Mix gently, forming a soft dough, without kneading it too much. To check if the dough will crack, take a small piece and form a perfectly smooth ball between your palms. If there are no cracks on the ball, the dough is perfect. If a crack appears, add 1 teaspoon of milk or ghee and lightly knead again.

Proper Frying

Heat enough ghee or oil in a pot over very low heat. The oil should not be too hot. Check the temperature by dropping a small ball: if it floats slowly without cracking, the temperature is ideal. Then, form medium-sized balls and drop them into the oil. It is important not to touch the balls with a spoon, but to rotate the oil itself so that the balls turn on their own and evenly acquire a golden-red color. Fry over low heat for about 7-8 minutes.

Finishing the Preparation

The finished hot Gulab Jamuns are removed and immediately placed in lukewarm syrup (neither boiling nor cold). They must be left in the syrup for at least two hours to fully absorb the juice, become very fluffy, and achieve the desired softness.

How to make delicious and crispy potato papads at home from potatoes

The enjoyment of food significantly increases during tea time or lunch if served with crispy papads and chips. However, ready-made papads sold in stores often contain various chemicals, preservatives, and low-quality oil. If you want to provide your family with tasty and healthy food, you should avoid store-bought papads containing impurities.

At home, you can prepare absolutely pure, white, crispy, and tasty potato papads with minimal cost. The advantage of these papads is that they can even be used during fasting. Below is a simple way to prepare them.

To prepare, you will need the following ingredients: 1 kilogram of large potatoes (white and fresh potatoes are best for chips); 1 large spoon of rock salt or regular salt (to taste; use rock salt when preparing for a fast); 1/2 small spoon of papad har / baking powder (optional, for extra crispiness); 1 small spoon of ground red pepper (for papads); 1 small spoon of cumin; 2 large spoons of finely chopped green coriander; 1 large spoon of oil (for greasing hands).

First, boil and peel the potatoes. Then, grate them to remove all the tubers.

Next, add salt, cumin, ground red pepper, green coriander, and a little oil to the potato puree, mixing thoroughly until it forms a dough.

After this, small balls are formed from the potato mass. A little oil is applied to a plastic sheet, a ball is placed on it, a second plastic sheet is placed on top, and then the papads are pressed with a heavy plate or cutting board to form a round papad.

The finished papads must be dried in the sun for one day. After drying, they should be stored in an airtight container for up to a year, and when desired, fried in hot oil and enjoyed.
