Next time you buy a pumpkin, you can make masala puri for breakfast or lunch. This recipe does not require much preparation time, and the taste is very pleasant. You will not need many ingredients for this, and you can easily make it using local spices.

Pumpkin Masala Puri Recipe:

Below is the instructions for making pumpkin masala puri.

Preparing the pumpkin: First, peel the pumpkin, remove the seeds, and cut it into large pieces. Place it in a multi-cooker along with about one cup of water and cook on medium heat until three whistles (3 whistles) are heard. After cooking, take the pumpkin out of the multi-cooker and let it cool. Then, thoroughly squeeze out the excess liquid and mash the pumpkin.

Kneading the dough: Take the mashed pumpkin in a large bowl. Add wheat flour, gram flour (besan), dry rice flour (sooji), mint, red pepper, coriander powder, turmeric, cumin, asafoetida, and salt. Mix all the ingredients thoroughly and knead a slightly firm dough. Cover the dough and leave it for about 10 minutes.

Shaping and frying the puri: After 10 minutes, knead the dough well again. Form small balls from it. Roll each ball in dry flour and flatten it into a medium-thickness puri. Heat oil in a pan. When the oil is hot, place the puris one by one. Gently press the puri with a ladle to make it puff up. Flip it when the bottom side turns golden brown and fry on the other side until cooked.

How to serve: After the puri is browned on both sides and becomes crispy, remove it from the oil and place it on a paper towel to absorb excess fat. Serve the hot pumpkin puris with potato curry, chutney, or pickled vegetables.

Pro tip: Since the pumpkin naturally contains moisture, you may not need to add extra water when kneading the dough. If the dough seems too soft, you can adjust the consistency by adding a little wheat flour or sooji.
