Chef Heidi Maston presented a dessert with South African motifs at the MasterChef finale

South African chef Heidi Maston brought the taste of her homeland to the finale of 'MasterChef: Global Gauntlet' by presenting a dessert featuring a marula liqueur mirror glaze, brownie crumble, raspberry coulis, and pistachio dust.

For Maston, who reached the top three of 'MasterChef: Global Gauntlet' Season 16, her final course in the competition was more than just a dessert—it was an embodiment of her home country. She added a distinct South African accent to the competition, using a mirror-glazed marula liqueur mousse served with brownie crumble, raspberry coulis, and pistachio powder.

This exquisite dessert allowed the chef, originally from Durban, to showcase a flavor closely tied to her South African roots on the international stage. The use of marula liqueur was particularly significant, transforming a distinctly African ingredient into an elegant high-cuisine dessert, introducing the judges to the tastes of the country where she grew up.

In a clip published on the Masterchefonfox Instagram account, Maston explains to Gordon Ramsay, the host and judge of the culinary contest, how marula is used at home. Maston stated: 'You would just get drunk on it.'

This served as a fitting conclusion to Maston's journey, as throughout the competition, she blended her South African and Indian heritage with the international culinary influences she gained during her career. She shared her feelings: 'Every emotion imaginable goes through my body, but I am sure of what I put on this plate. It truly represents my country, and I am so proud of what I did here.'

Earlier in the competition, Maston impressed the judges with her rendition of Bengdit eggs, combining crab meat with a peri-peri hollandaise sauce, which once again demonstrated her ability to integrate South African flavors into well-known dishes.

For Maston, cooking has always been more than just placing food on a plate. Her culinary identity was shaped by growing up in Durban, her heritage, and years of traveling the world as part of her career in the luxury yacht industry.

Ultimately, her participation in MasterChef concluded with a spot in the top three finalists, where she competed against chefs from around the world, carrying a piece of South Africa in every dish.
