Suji Aloo Samosa Recipe: Crispy and Spicy Snack Made from Semolina and Potato

As soon as you hear the word samosa, you want something spicy with tea. Usually, making samosas at home seems like a complicated process that requires kneading and rolling dough from flour. However, you can prepare an equally delicious snack without using wheat flour. Today we present a recipe for a snack made from semolina (suji) and potato, which resembles a samosa in appearance but turns out very crispy and aromatic. Its specialty lies in using semolina to make the dough, which is filled with a rich filling of spices, then coated in a light spiced batter, and deep-fried. This snack will be very popular among home lovers, especially when served with tea.

Suji Aloo Samosa Recipe:

To begin, you need to prepare the semolina dough. Pour 3 cups of water into a large pot, add 1 teaspoon of oil and salt, and then mix in 2 cups of fine semolina. Although fine semolina is better, regular semolina will also do. Then turn on the heat and stir the mixture constantly. After some time, the semolina will absorb the water and thicken, turning into a dough consistency. When the mixture is completely ready, turn off the heat, cover it with a lid, and lightly grease it with oil so that the dough becomes soft and easy to roll.

Next is preparing the potato filling. Heat oil in a small pan, reduce the heat to medium, and add hing, cumin, mustard, and whole coriander. After this, fry garlic cloves and green pepper. Then add grated ginger and curry leaves, turn off the gas, and mix with turmeric and red chili. Pour the finished spicy sauce onto 5 boiled potatoes in a large bowl, add salt to taste, and finely chopped herbs. Mash the potatoes thoroughly using a potato masher, ensuring that the garlic, green pepper, and spices are evenly distributed throughout the potatoes.

After this, gently knead the semolina mass with your hands until it becomes soft and stops sticking to your hands. Form small balls from it. Roll one ball on a lightly oiled surface, trying not to make it too thin, but leaving a moderate thickness. Place a generous portion of the potato filling in the center. It is important to leave a little space around the edges. Place another rolled piece of semolina on top and carefully press the edges with your fingers to seal it tightly. Cut the resulting pieces into four parts, thus forming shapes resembling samosas.

Now, prepare the special coating. Take wheat flour in a bowl, add chili flakes, chopped curry leaves, green dill, kalonji, white sesame seeds, and salt. Then gradually add water to form the batter. The consistency of this batter should be such that the finished semolina and potato pieces are well covered.

Heat oil in a pot. As soon as the oil is well heated, dip the pieces made from semolina and potato into the batter and immediately drop them into the hot oil. After placing them, reduce the heat to medium. Fry these pieces until they become golden and crispy. Your delicious Suji Aloo Samosa is ready. Serve it hot with tea, green or sweet and sour chutney. The crispy outer crust and spicy potato filling make the taste even richer.
