When zucchini (lauki) is mentioned, most people primarily associate it with vegetable dishes or curries. When it comes to a zucchini dessert, thoughts are usually limited to halwa or barfi. However, it is possible to prepare a dessert that externally resembles noodles but tastes similar to Agra's pita, and this is entirely achievable.
The specialty of this delicacy is that it cooks very quickly, and no one would guess it is made from zucchini upon seeing it. During the holiday season, you can prepare a delicious Lauki Lachcha dessert that tastes like pink lachcha.
The main advantage of this recipe is that it does not require mawa, milk powder, milk, or condensed milk. The main ingredients are only zucchini and sugar. Its taste slightly resembles Agra's pita, and its appearance is a noodle-like dessert.
How to Make Lauki Lachcha
To make Lauki Lachcha, you need to use fresh zucchini. Using old or soft zucchini will not provide the desired texture. The zucchini should be thoroughly washed and peeled. Then, the green parts must be cut into thin strips.
For cutting, you can use a julienne peeler, or thin strips can be obtained using a regular vegetable peeler and a knife. The white inner part of the zucchini is not used for this dessert; it can be set aside for making curry or another vegetable dish.
The cut zucchini strips should immediately be placed in water with a little lemon juice. This prevents the strips from darkening and improves their color and texture.
Keep the strips in cold water for about 15–20 minutes. This helps maintain a crunchy texture so that they do not completely fall apart after cooking.
Cooking Process
When about three cups of zucchini strips are ready, heat 1 cup of sugar and 1 cup of water in a large saucepan. After the sugar is completely dissolved in the boiling liquid, add the zucchini strips.
At this stage, it is not necessary to add many other components. The zucchini should be cooked with the sugar over medium heat. Optionally, a few drops of green food coloring can be added for color, although the dessert will look good without it.
Cook the zucchini until the sugar is almost completely absorbed into the strips. Only one or two teaspoons of sugar syrup should remain in the pot. At this point, the zucchini will become soft, but the shape of its strips will be preserved.
After the sugar has almost dried out, add two cardamom seeds and a little saffron to it. A few drops of rose water can also be added. Then turn off the heat, and add one or two teaspoons of desiccated coconut to the mixture. Adding coconut improves both the taste and texture, making the dessert more visually appealing.
The finished zucchini strips can be eaten immediately, but for better taste and texture, it is recommended to store them in the refrigerator for about two hours. After cooling, the strips easily separate from each other and resemble a special dessert.
