In an era when refrigerators, freezers, and airtight containers did not exist, people used numerous traditional methods to prevent food spoilage. Although we have modern solutions today for storing leftovers or preserving food long-term, ancient inhabitants knew how to protect meat, fish, milk, and other products from rapid decay using only natural knowledge.
Archaeological findings confirm that people have long sought ways to extend the shelf life of food, as they understood that improper storage would lead to a quick deterioration of product quality.
One of the simplest ways to ensure food preservation was drying. Removing moisture from meat, fish, fruits, and other products hinders the growth of microorganisms that cause spoilage. When water content is reduced, bacteria cannot actively develop, allowing products to last significantly longer. This ancient method is still used today for storing dried fruits, papads, fish, and various types of meat.
In antiquity, salt was used not only to enhance flavor but also as a critical tool for long-term storage. Applying salt to meat or fish reduces the water content in the product, thereby suppressing the activity of microorganisms responsible for rotting. Thus, salt served a dual function: improving taste and preventing rapid decomposition.
To ensure long-term preservation of meat, people practiced smoking. Archaeologists discovered a large number of animal bones, along with traces of fire and a pit intended for wooden structures, at a site dating back about 19 thousand years. Researchers suggested that a structure similar to a grate was used there to dry meat in smoke.
Methods similar to modern marinades, yogurt, and other fermented products have very deep roots. During fermentation, specific microorganisms transform sugars, creating an environment where other spoilage-causing microorganisms cannot actively grow. An archaeological site in Sweden, dating back approximately 8,600 – 9,600 years, revealed over nine thousand fish bones. Signs of acid damage were found on these remains, which researchers linked to fermentation and consider one of the oldest evidence of fermented products.
When there were no refrigerators, people used nature itself as a cooler. Products were placed in caves or specially dug underground pits. The temperature underground is generally more stable compared to the external environment, which helped preserve some products for a long time.
One method that seems surprising by modern standards is burying oil in the marshy areas of Ireland and Scotland. About 500 pieces of ancient oil have been found, some dating back thousands of years. In swamp conditions, low oxygen levels and acidic environments slow down microbial activity and the process of decay, allowing these oils to be preserved. In 2009, a piece of oil weighing about 77 pounds (approximately 35 kg) dating back about 3,000 years was found, and in 2013, a piece weighing about 100 pounds (approximately 45 kg) dating back about 5,000 years was found. Although archaeologists consider these samples theoretically edible, consuming them is unsafe.
The main lesson learned by ancient people was a deep understanding of nature. They knew that moisture, heat, and air could quickly spoil food. Therefore, they employed techniques such as drying, salting, smoking, fermentation, and placement in cold or anaerobic places. Many of these methods are still used in our homes today. The difference is only that today we have conveniences like refrigerators and freezers, whereas millennia ago people preserved their food by following the laws of nature.
