Homemade Modak Recipe with Mawa and Saffron for Ganesh Chaturthi Celebration

During the sacred festival of Ganesh Chaturthi in Maharashtra, it is customary to offer modaks (steamed dumplings) to Lord Shiva. Traditionally, these modaks are filled with a stuffing of coconut and maple syrup; however, if you wish to make the offering more luxurious and special, you can prepare steamed modaks with a filling of mawa (goat cheese) and nuts.

The soft outer shell made from rice flour, scented with saffron, combined with the delicate mawa filling creates an incredible taste that everyone will enjoy.

For the outer shell (Ukad/Dough): Rice flour (modak dough) — 1 cup, water — 1.25 cups, ghee — 1 teaspoon, salt — a pinch, milk — 2 tablespoons (for softness), 8-10 saffron strands (soaked in water to extract color).

For the mawa filling (Bravo): Mawa (goat cheese) — 1 cup, crushed sugar or jaggery — 1/2 cup, cardamom powder — 1/2 teaspoon, nutmeg powder — a pinch, grated dried coconut — 2 tablespoons, finely chopped cashews, almonds, and pistachios — 2 tablespoons, saffron strands — 8-10 (soaked in milk).

Preparing the mawa filling: Sauté the mawa in a pan over low heat for 3-4 minutes until lightly pink. Then add the chopped nuts, grated coconut, saffron milk, nutmeg, and cardamom. Turn off the heat, and once the mixture has cooled slightly, stir in the crushed sugar and set aside.

Preparing the ukad (rice flour): Bring water, 2 tablespoons of milk, a pinch of salt, water with soaked saffron, and 1 teaspoon of ghee to a boil in a pot. As soon as it boils, reduce the heat and gradually pour in the rice flour while stirring thoroughly with a spatula.

Steaming: Cover the pot and cook on low heat for 2 minutes. After this, turn off the heat and let the pot sit covered for another 5 minutes so the dough becomes soft from its own steam.

Kneading the dough: Remove the warm flour into a large bowl. Add a little water and ghee to your hands and knead the dough for 4-5 minutes until smooth and elastic, ensuring the modaks do not tear.

Shaping the modaks: Take a small portion of the dough. Lightly grease your hands or a mold with oil and form a thin, cup-like shape from the rice flour.

Filling and forming the pleats: Place 1-2 teaspoons of the mawa filling in the center. Using your fingers, create 7-9 folds (petals) around the edges, then lift the edges and tightly join them, closing the modak.

Final steaming: Place a damp cotton cloth over the steamer or rack. Moisten the modaks in water and place them on the rack. Steam over medium heat for 10-12 minutes. The finished modaks can be drizzled with a small amount of ghee and offered to the deity.
