Whether you are celebrating or just craving something sweet at home, making sweets yourself is the safest and preferred option instead of buying expensive and artificial products in stores. If you have regular lentil flour (besan) and pure clarified butter (desi ghee), you can easily prepare very crispy, grainy, and aromatic lentil flour laddus without much hassle. The aroma and richness of these laddus, achieved by roasting the lentil flour in ghee over low heat, will make them incredibly delicious, and everyone will praise you for them.
Lentil Flour Laddus:
To make this dessert, you will need the following ingredients: lentil flour — 2 cups, pure clarified butter — 1/2 cup, crushed sugar or rock candy (burra) — 1 cup, cardamom powder — 1/2 teaspoon, water — 1-2 teaspoons (to achieve a grainy texture), finely chopped cashews and almonds — 2 tablespoons (optional).
The cooking process begins by heating the clarified butter in a heavy-bottomed pot. Then, the lentil flour is added and roasted over low heat, stirring constantly. After the lentil flour has been roasted over low heat for 10-12 minutes, its color will turn light golden, and a characteristic warm aroma will begin to emanate.
Once the lentil flour is fully roasted, a few splashes of water should be added to it. This will cause foam to form, and the flour will become perfectly grainy. Continue stirring for another minute until all the water evaporates. After that, turn off the heat and let the mixture cool slightly in a wide dish. It is important not to mix the sugar with the hot flour, otherwise, the sugar will melt and make the mixture liquid.
When the mixture becomes warm, add the cardamom powder, chopped nuts, and crushed sugar or rock candy, mixing thoroughly by hand. Then, shape small portions into round laddus. Your crispy, aromatic, and grainy laddus are ready to eat.
