Lentil Flour Laddus:

To make this dessert, you will need the following ingredients: lentil flour — 2 cups, pure clarified butter — 1/2 cup, crushed sugar or rock candy (burra) — 1 cup, cardamom powder — 1/2 teaspoon, water — 1-2 teaspoons (to achieve a grainy texture), finely chopped cashews and almonds — 2 tablespoons (optional).

The cooking process begins by heating the clarified butter in a heavy-bottomed pot. Then, the lentil flour is added and roasted over low heat, stirring constantly. After the lentil flour has been roasted over low heat for 10-12 minutes, its color will turn light golden, and a characteristic warm aroma will begin to emanate.

Once the lentil flour is fully roasted, a few splashes of water should be added to it. This will cause foam to form, and the flour will become perfectly grainy. Continue stirring for another minute until all the water evaporates. After that, turn off the heat and let the mixture cool slightly in a wide dish.
