How to Make Spicy Amla Chutney Using Fennel Instead of Mango and Lemon

Amla is considered a treasure trove of health benefits as it is rich in Vitamin C, antioxidants, and fiber. However, many people prefer not to eat it raw due to its tartness. If you want to include amla in your daily diet and try something new instead of the usual mango and lemon chutney, make spicy amla chutney with a fennel flavor.

The delicate aroma and coolness of fennel completely eliminate the tartness of amla, making this chutney so delicious that you will enjoy it with roti or paratha.

The following ingredients are needed for preparation: fresh amla — 500 grams; fennel seeds — 3 large tablespoons (coarsely ground); yellow or black mustard — 2 large tablespoons (coarsely ground); fennel seeds — 1 small teaspoon; kalonji (nigella seeds) — 1/2 small teaspoon; asafoetida (hing) — 1/4 small teaspoon; turmeric powder — 1 large tablespoon; Kashmiri red chili powder — 1.5 large tablespoons (for color and heat); amchur powder or lemon juice — 1 small teaspoon; black and white salt — to taste (add slightly more salt); mustard oil — 1/2 cup.

Rinse the amla, then boil it in a multi-cooker until one whistle sounds or in a pot for 8–10 minutes until the fruits start to separate. After boiling, peel the cooled fruits and separate them into pieces. Spread these pieces on a cotton cloth and air dry for an hour to remove surface moisture.

In a pan, slowly roast the fennel seeds, fennel seeds, and mustard for 1 minute. After cooling, grind them in a blender until coarsely ground. In a pot, heat 1/2 cup of mustard oil until it smokes, then turn off the heat and let the oil warm slightly. Add asafoetida and kalonji to the warm oil. Then stir in the ground spice mixture, turmeric, red chili powder, black and white salt.

Now add the boiled amla pieces to this spiced oil mixture and mix thoroughly so that each piece is coated with spices. Your instant fennel-flavored amla chutney is ready. Cool it and transfer it to a dry glass jar; it keeps for months.
