The following ingredients are used for preparation: 2 cups of rice flour, 1 teaspoon of ginger and garlic paste, 1 teaspoon of crushed red pepper, 1 and a half teaspoons of dried mint (kasuri methi), 2 tablespoons of finely chopped fresh cilantro, 2-3 teaspoons of oil, salt to taste, as well as ghee for frying the parathas, and 2 cups of water.

First, heat 2 cups of water in a pan. When the water starts to heat up, add salt, crushed red pepper, kasuri methi, fresh cilantro, ginger and garlic paste, and 2-3 teaspoons of oil. Mix all components thoroughly.

Next, gradually pour the rice flour into this hot water, stirring constantly to avoid lumps. The flour will start absorbing the water. Continue stirring for about two minutes until the dough thickens. After that, turn off the heat and cover the pan with a lid for two minutes.

After two minutes, transfer the prepared mixture to a plate and let it cool slightly. Then, greasing your hands with a little oil, knead the dough thoroughly. If the mixture seems too hot, it is better to knead it after it has cooled down a bit.

After that, form small balls from the dough. Sprinkle the work surface with a small amount of dry rice flour and roll the ball into the shape of a paratha. Heat the pan, place the paratha on it, and fry it on both sides, brushing with ghee. As soon as the parathas become slightly golden and well cooked, remove them from the pan.

The finished crispy rice flour parathas can be served hot with potato curry, yogurt, or any other favorite dish.
