During the holiday season or simply when you crave something sweet, it is best to prepare pure sweets at home instead of buying expensive and artificial products in stores. If you have regular chickpea flour (besan) and pure ghee (desi ghee), you can prepare soft, grainy, and melt-in-your-mouth besan burfi in minutes without using mawa or extra hassle.
Thanks to the aroma of roasted chickpea flour in ghee, this burfi has such a magnificent taste that even expensive confectionery items seem dull compared to this homemade dessert.
Ingredients
To prepare, you will need the following components: 2 cups of chickpea flour (besan), 1/2 cup of pure ghee (desi ghee), 1 cup of crushed sugar (boora/tagar), 1/2 teaspoon of cardamom powder, 2 tablespoons of finely chopped cashews and almonds (for garnish), and 2 tablespoons of milk (to give a grainy texture).
Instructions
First, heat the ghee in a thick-bottomed saucepan. Then add 2 cups of chickpea flour and fry over low heat, stirring constantly. When the chickpea flour has been roasted for 8–10 minutes and begins to emit its characteristic aroma, add two tablespoons of milk. This will help form a beautiful grainy structure in the flour.
When the chickpea flour turns light golden, turn off the heat and remove the saucepan from the fire. Let the mixture stand for 3–4 minutes until it is slightly warm. When the mixture is warm enough to touch, stir in 1 cup of crushed sugar and cardamom powder, mixing thoroughly. It is important not to add sugar to hot flour, otherwise, it may release moisture and the burfi will turn hard.
Grease a mold or tray with a little oil. Spread the prepared chickpea mixture evenly and press the chopped cashews and almonds on top. Let the mixture set for 20–30 minutes. After that, cut the burfi into pieces with a knife. Your aromatic and delicious besan burfi is ready to eat.
