Chana Jor Garam, which is usually sold on the streets, can now be easily prepared at home to achieve the authentic taste of street food. This snack is characterized by its crunchy texture and bright, spicy flavor, imparted by spices, onions, tomatoes, and lemon juice.
Street food in India is famous for its unique and delicious taste, and Chana Jor Garam is one of such popular dishes. It is loved for its spicy and crunchy flavor. Since it is made from chickpeas, it is also a source of protein. Therefore, if you like this snack, there is no need to always go out; with a little effort, you can create a version at home as tangy as the one from the shop.
To begin cooking, you need to thoroughly wash 250 grams of black chickpeas (black lentils) and soak them in water for seven to eight hours. After that, drain the chickpeas and place them in a pressure cooker, adding about two cups of water, and cook until two whistles (until done).
While the chickpeas are cooking, you should prepare the spices. In a bowl, mix red chili powder, amchur powder, chaat masala, black salt, and a little regular salt. It is advisable to also add a little roasted cumin. After the pressure in the cooker drops, strain the chickpeas and spread them on a clean surface or plate.
Next, using a rolling pin, lightly press and flatten each chickpea. This process is repeated with all the chickpeas. Then, all the flattened chickpeas must be dried in the air under a fan. The better they dry, the crunchier they will be. After drying, fry the chickpeas in hot oil in a pot until they reach a crunchy state.
If you prefer to cook with less oil, you can use an oven. In this case, spread the chickpeas on a baking tray, brush them with a small amount of oil, and bake until crispy.
The finished crispy chickpeas are transferred to a large bowl. The prepared spice mixture is added to it and mixed thoroughly. Then, finely chopped onions, tomatoes, green chilies, and fresh coriander are incorporated. Finally, half a lemon is squeezed, and all ingredients are mixed well again.
Your tangy and crunchy Chana Jor Garam is ready. It should be served immediately to enjoy a taste similar to street food right in your own home.
