Then, heat the milk with sugar in a large saucepan over medium heat, stirring constantly until the sugar is completely dissolved.

After this, bring the milk to a gentle boil, ensuring it does not stick to the bottom of the saucepan. Lower the heat and gradually pour in the flour and butter mixture into the hot milk, whisking continuously. Gradual addition of the mixture helps prevent the formation of large lumps.

Continue cooking over low heat for about 8–10 minutes, stirring regularly, until the mixture thickens and the flour is completely cooked. If a smoother melkkoes is desired, continue whisking during cooking. To achieve a more traditional texture with small soft pieces, stir gently rather than aiming for complete uniformity.

Before serving, mix the cinnamon with a small amount of sugar and sprinkle it over the finished melkkoes. It should be served hot.

Can Melkkoes be made with sago?

Yes, sago is used in some variations of melkkoes, although this changes the texture and preparation method. Sago recipes usually require boiling the pearls in milk until they become translucent and the entire mixture thickens.

For the sago version, the sago must first be soaked according to the package instructions, and then slowly boiled in milk until the pearls are translucent. In this case, the flour and butter mixture used in this recipe will not be needed in the same way. Thus, sago-melkkoes is better considered a modification rather than simply adding sago to this recipe.
