Preparations for the 18th BRICS Summit, which will take place in New Delhi on September 12 and 13, are in full swing. Hotels in the capital are organizing special arrangements to host leaders and delegations from various countries. A special menu is being developed at The Leela Palace so that foreign guests can experience the authentic taste of India.
According to Astika Oberoi, the hotel's executive chef, the development of this menu has been underway for the last two or three months. The menu was created individually, taking into account the preferences, diet, and needs of each delegation.
Individualized Dining Approach for Foreign Guests
Since taste preferences and dietary restrictions can vary among different delegations, the hotel decided not to use a single menu but to accommodate the personal wishes of each guest. Astika Oberoi noted that some guests have specific dietary requirements or have informed in advance about allergies, so each menu was carefully planned, paying attention not only to taste but also to health and preferences.
The Taste of India from North to South on a Plate
Indian cuisine will be the central element of the entire gastronomic experience. The hotel's Jamavar restaurant will be a special attraction during the summit. The menu will feature local dishes from various regions of India, focusing on showcasing the diversity of Indian cuisine to foreign visitors. Special attention is paid to the use of traditional ingredients and Indian spices.
A Special Place for Ancient Grains
Ancient grains, or Shri Ann (millets), hold a special place in the special menu. Traditional grains are served in a modern presentation, such as millet upma. Quinoa biryani is also included in the menu. Preeti Makhija, the hotel's General Manager, reported that in the specially designed menus, besides Indian spices, traditional products such as barley, millets, sorghum, and sattu are used, allowing guests to try various dishes made from traditional Indian grains.
From Sattu and Barley to Health Drinks
Part of the guests' experience will be elements of The Leela Palace Hotels and Resorts' signature wellness program. This includes traditional Indian components such as sattu and barley. The hotel also presents the Leila Amrit drink, made from ingredients such as tulsi, ginger, honey, lemon, and cumin. Thus, the menu combines Indian flavor with traditional and wellness options.
Desserts Highlighting Lotus and Indian Spices
The dessert menu for guests will also feature Indian aromas. A lotus dessert will be served as a sweet treat, prepared with added flavors such as rose and cardamom.
Preeti Makhija also emphasized that besides Indian cuisine and hospitality, safety is a top priority in the hotel's preparations. Teams from the Delhi Police, in collaboration with the hotel team, are monitoring order and ensuring a high level of security at all events.
