Marwari Mangodi Ki Sabzi Recipe: How to Prepare Lentil and Yogurt Dish

Rajasthani cuisine is known for its authentic taste and the unique aroma of spices. There are many traditional dishes here that can be prepared even with a limited amount of vegetables. In the past, due to Rajasthan's desert climate, transporting large quantities of vegetables was difficult, and high temperatures prevented them from lasting long. Therefore, local residents cooked foods that could be preserved for a long time. One such dish is lentil Mangodi Ki Sabzi, traditionally prepared by the Marwari people.

This recipe allows you to easily prepare Marwari Mangodi Ki Sabzi at home, especially when other vegetables run out. The mangodi, made from lentils, are fried in ghee and then simmered in a thick sauce of tomatoes, yogurt, and spices. A distinguishing feature of this dish is that it does not require many ingredients, allowing you to quickly create a rich and juicy sabzi without much fuss.

To begin, fry the mangodi. Heat about one teaspoon of ghee or oil in a pot, then add the lentil mangodi and fry over low to medium heat until lightly golden brown. As soon as a pleasant aroma starts coming from the mangodi, remove them and set them aside. It is important not to fry them too much, otherwise, the taste may become bitter.

Next, prepare the spice base. Add the remaining ghee to the same pot, then fry cumin seeds and a pinch of asafoetida. After the cumin sizzles, add the ginger and green chili paste and sauté for a few seconds.

Then, add finely chopped tomatoes or tomato puree along with turmeric, red chili powder, coriander powder, and salt to taste in a pan. Simmer the spices until the tomatoes are completely soft and the oil begins to separate from the spices.

If you wish to give the sabzi a tangy and creamy flavor, you can add whisked yogurt. When adding yogurt, maintain low heat and stir constantly so that the yogurt does not curdle.

After this, add about 2-3 cups of water to the spices, mix thoroughly, and bring the sauce to a boil. The amount of water can be adjusted according to the desired consistency. Then, add the fried mangodi to the boiling sauce. Cover the pot and simmer on low heat for about 10-15 minutes, until the mangodi has absorbed the flavor of the sauce and become soft. If the sauce seems too thick, you can add a little hot water.

Finally, when the sabzi is ready, garnish it with chopped green onions and add a little garam masala, which significantly enhances the flavor of the dish.

This juicy Marwari Mangodi Ki Sabzi pairs very well with hot chapati, paratha, bajra roti, or bati. It can be served for lunch or dinner. The dish prepared using desi ghee gives ordinary dishes a Rajasthani touch. If you prefer a spicier taste, you can adjust the amount of chili to your liking.

Tip: Lightly frying the mangodi before adding it to the sauce significantly improves its taste and aroma. If you prefer a runnier sabzi, increase the amount of water and let the mangodi simmer in the sauce longer.
