To begin, mix the semolina and rice flour in a deep bowl. Gradually add a little water, stirring thoroughly. Then add asafoetida, cumin, and salt, and stir again. Cover the bowl and leave it for 2-3 hours to soak.
Meanwhile, finely chop the onion, green chili, ginger, and cashews. After the mixture has rested, take the dosa batter, add all the chopped ingredients except the onion, and then dilute with water to the desired consistency. It is important that the liquid batter is slightly thinner than regular dosa batter.
Heat a skillet over medium heat and grease it with a little oil. When the skillet is hot, pour one ladle of batter into the center and gently spread it into a round shape. Evenly distribute the finely chopped onion and a little green chili on top. Gently press the onion with a spoon so that it adheres well to the dosa.
Cook the dosa for 2-3 minutes. Then add a little oil around the edges and fry until the bottom is golden and crispy. Carefully flip the dosa and fry on the other side until cooked. Fold the finished dosa in half and place it on a plate. Repeat the process with the remaining batter.
