Chef Sanjeev Kapoor shares recipe for vegetable dal khichdi that children will love

When people hear the word khichdi, they often imagine a simple mixture of lentils and rice, but this dish is not always liked by both children and adults. Children often refuse to eat khichdi, but with a little twist, it can be made tasty and nutritious.

Famous chef Sanjeev Kapoor has shared a simple way to turn ordinary dal khichdi into something more appetizing and healthy. He claims that adding nutritious ingredients can make this simple dish healthier and tastier for children. The ingredients include beans and rice, as well as various vegetables seasoned with spices. Special attention is paid to steaming using ghee, which makes the khichdi soft and aromatic.

To prepare this khichdi, you need to take rice and various types of lentils, including both whole and split. First, the beans and rice should be thoroughly washed and cleaned to remove dust and dirt.

Next, chopped beans and grated carrots are added to the ingredients. Ginger, cloves, cardamom, and a little asafoetida are also used. Salt and turmeric are added for flavor; if the dish is prepared for children, the spiciness should be adjusted according to their preferences.

All components are placed in a pressure cooker, the required amount of water and a little ghee are added. Then the dish is cooked under pressure until 2-3 whistles. After it is fully cooked, the beans, rice, and vegetables are mixed, forming a tasty and soft khichdi.

This khichdi can be served with additions such as yogurt and papads.

The main feature of Sanjeev Kapoor's khichdi is that vegetables can be easily integrated with the rice and beans. Thanks to the use of ghee and mild spices, the dish acquires a pleasant taste. For children's diet, it is recommended to cook the khichdi with a soft and tender consistency so that children can eat it easily.
