Hearing about crispy and juicy jvalebi is irresistible. You have probably tried various types of jvalebi, but have you tried cane sugar jvalebi? This type of jvalebi features a more authentic and local flavor, being crispy on the outside and filled with juice inside. The main advantage is that it is very simple to make at home.

This recipe requires ingredients such as flour, wheat flour, sour yogurt, and cane sugar. Below is a detailed guide on how to make delicious and crispy cane sugar jvalebi and what components are needed for this.

To begin making cane sugar jvalebi, take 1 kilogram of flour and 200 grams of wheat flour in a large bowl. Add the sour yogurt and mix thoroughly. Then, gradually add a little water as needed to form the dough. It is important to ensure that the dough is neither too thick nor too runny. After this, cover the bowl and leave it for approximately 12 hours to allow the dough to properly rest.

After 12 hours, beat the prepared mass well until it becomes smooth and ready for shaping the jvalebi.

Heat ghee in a frying pan. Fill the cloth intended for making jvalebi with the prepared dough, leaving a small opening at the bottom of the cloth. Now, while rotating in the hot ghee, shape round jvalebi. Fry them on both sides until golden and crispy.

In another pan, pour in the cane sugar and add a little water as needed. Cook the syrup over medium heat, without letting it become excessively thick. Immediately after frying the jvalebi, dip them into the warm cane sugar syrup. Leave the jvalebi in the syrup for about 5–10 minutes so they fully absorb the cane sugar flavor.

Then, serve the hot or slightly cooled cane sugar jvalebi. This jvalebi, rich in local flavors, will be liked by everyone in the house.
