Dosa is a favorite South Indian breakfast dish; however, the traditional preparation method requires soaking rice and lentils for a long time, followed by overnight dough fermentation. Furthermore, people watching their weight or suffering from diabetes often avoid dosa due to its high rice content. If you want to quickly prepare a tasty, crispy, and high-protein dish without much hassle, dosa made from chickpea flour and semolina will be an ideal choice.
Chickpea flour is rich in protein and fiber, which promotes a lasting feeling of fullness. Below is a very simple and quick instruction for preparing this dish.
Ingredients
For the dosa batter:
Chickpea flour (chana dal) — 1 cup (soaked in water for 2-3 hours)
Semolina (sooji) — 1/2 cup
Yogurt — 1/4 cup (slightly sour)
Ginger — 1-inch piece
Green chili — 2
Salt — to taste
Water — as needed
For the potato filling:
Boiled potatoes — 3 (mashed)
Onion — 1 (thinly sliced)
Rai and cumin — 1/2 teaspoon
Curry leaves — 8-10
Turmeric powder — 1/4 teaspoon
Red chili powder — 1/2 teaspoon
Oil — 1 tablespoon
Finely chopped cilantro — fresh
Instructions
Drain the water from the soaked chickpea flour. Then, place the chickpea flour, ginger, green chili, yogurt, and a little water into a blender and grind until a very fine and smooth paste is formed.
Transfer the ground chickpea paste to a bowl. Add the semolina, salt to taste, and the required amount of water to achieve a consistency suitable for dosa (not too thick and not too thin). Cover the batter for 10 minutes to allow the semolina to swell.
Heat 1 tablespoon of oil in a pan. Sauté the rai, cumin, curry leaves, and sliced onion for 2 minutes. Then add turmeric, red chili powder to taste, salt, and the mashed boiled potatoes, stirring well for 2-3 minutes. Sprinkle with finely chopped cilantro and remove from heat.
Heat a non-stick or cast-iron skillet over medium heat. Wipe it with a damp cloth, lightly spraying with water.
Reduce the heat and pour 1-2 ladles of batter into the center of the skillet, spreading it evenly into a thin layer outwards. Brush the edges and center of the dosa with a small amount of oil or ghee. Increase the heat to medium-high and fry until golden and crispy on the bottom.
When the dosa becomes crispy and starts to lift from the pan, place the prepared potato filling in the center and roll up the dosa. Serve the hot, high-protein dosa with peanut or coconut chutney and sambar.
