Simple Creamy Pie with Chicken and Mushrooms on Puff Pastry

Chicken and Mushroom Pie Recipe

The pie serves 8–12 portions.

Ingredients

For the Filling

  • 2 tbsp butter
  • 1 large onion, finely chopped
  • 1 green pepper, finely chopped
  • 1 tbsp garlic
  • 6 diced chicken breasts
  • 50g tomato paste
  • A pinch of water
  • 1 package of mushrooms of your choice, sliced
  • 1 packet of mushroom soup powder
  • 1 cup of milk
  • 1 cup of cream

Spices:

  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp garlic and herb seasoning
  • 1 tsp chicken seasoning
  • 1 tsp ground coriander
  • 1 tsp minced chili
  • 1 tsp black pepper, or to taste
  • Salt to taste

For the Pastry

  • Puff pastry sufficient to cover the bottom and top of your baking dish
  • 1 egg, beaten, for egg wash, optional
  • Sesame seeds, optional

Instructions

  1. Heat the butter in a large skillet over medium heat.
  2. Add the onion and green pepper and cook for 5–10 minutes, stirring occasionally, until soft and slightly golden.
  3. Add the garlic and stir.
  4. Add the diced chicken and cook until browned, stirring as needed.
  5. Add paprika, cumin, garlic and herb seasoning, chicken seasoning, coriander, minced chili, black pepper, and salt. Stir well so the chicken is evenly coated with spices.
  6. Add tomato paste and a pinch of water, then mix until combined.
  7. Add the mushrooms. Cover the skillet and cook for about 10 minutes, stirring occasionally, until the mushrooms are tender.
  8. In a separate bowl, whisk the mushroom soup powder into the milk until smooth. Pour this into the chicken mixture and stir.
  9. Add the cream and let the filling simmer slowly until the sauce thickens.
  10. Remove from heat and allow the filling to cool completely.
  11. Preheat the oven to 200°C and grease the baking dish.
  12. Place a layer of puff pastry on the bottom of the dish. Pour the cooled chicken and mushroom filling into the pastry-lined dish.
  13. Cover with another layer of puff pastry and crimp the edges to seal. Trim excess pastry and decorate the top with remaining pastry, if desired.
  14. Brush the pastry with beaten egg and sprinkle with sesame seeds, if using. Make several small slits or holes on top to allow steam to escape.
  15. Bake for about 30 minutes or until the pastry rises and turns golden brown.
  16. Let the pie rest for a few minutes before serving.

How to Prevent the Pie from Becoming Soggy

The biggest mistake is adding the pastry while the filling is still very hot. Steam and moisture from the filling can soften the pastry before it has time to bake properly. The simple action of letting the filling cool can significantly change the final appearance of the pie.

Additionally, the filling should be thick, not watery, before placing it in the pastry. If the sauce still looks too liquid, let it simmer a little longer to thicken and coat the chicken and mushrooms.

When assembling the pie, keep the puff pastry as cold as possible and put it in the hot oven immediately after assembly.
