Kulith Dal Soup Recipe: Traditional Mountain Drink for Health Strengthening

To maintain the body's internal warmth and replenish protein deficiency, it is recommended to prepare the famous mountain soup made from Kulith Dal. This traditional soup, prepared using desi aromatics such as garlic, cumin seeds, and lemon, is distinguished by its exceptional taste, nutritional value, and ease of preparation.

Kulith Dal is widely used in mountainous regions. This legume crop is also known as Gahat Dal, and the soup made from it is considered not only delicious but also warming for the body. In various mountainous areas of Uttarakhand and Himachal, many traditional dishes are made from kulith. If you want to enjoy something healthy and aromatic during heavy rain, you can easily make Kulith Dal soup at home.

If you are tired of monotonous soups, be sure to try this mountain-flavored soup. It can be served hot in the evening or when feeling slightly hungry, and the process of preparing it is very simple.

First, thoroughly wash the Kulith Dal and soak it in water for six to eight hours or overnight to speed up the cooking process. Drain the water from the soaked legume and place it in a multi-cooker along with about three cups of water, turmeric, and a small amount of salt. Cook over medium heat until four to five whistles (signals) are achieved.

After the dal is cooked, let it cool down a bit. Then, blend it in a blender until it reaches a slightly coarse grind or the desired smoothness. If the soup seems too thick, you can add some hot water.

Next, heat ghee in a pan and fry the cumin seeds in it. As soon as the cumin starts sizzling, add finely chopped ginger, garlic, and onion and fry until the onion turns golden brown. After that, add tomatoes and cook until they soften.

Then, add red chili powder and immediately stir in the ground Kulith Dal. Add water as needed and simmer the soup over low heat for five to seven minutes. At the end, add salt to taste and turn off the heat.

When serving, sprinkle the soup with finely chopped fresh coriander and drizzle with a few drops of lemon juice. The finished mountain Kulith soup will be ready to eat.

Kulith is a traditional legume rich in plant-based protein and fiber. Its soup can be a light, spicy, and satisfying dietary option. However, it is important to view any food as part of a balanced diet, not as a cure for any diseases.
