Not rinsing the lentils enough

Before starting to cook, it is crucial to thoroughly rinse the lentils in clean water two or three times. This process helps remove dust, dirt, and excess starch. After washing, it is best to let the legumes sit in the water for a while, as this improves the texture of the finished dish.

Not controlling the amount of water

If too little water is added, the lentils will not cook properly, and the water in the pressure cooker may run out quickly. Conversely, too much water will make the dish too watery. Therefore, you must add a sufficient amount of liquid based on the volume of lentils and the chosen cooking method.

Adding acidic ingredients at the very beginning

Although products such as tomatoes, tamarind, or lemon juice improve the flavor, adding them at the very beginning of the cooking process can slow down the softening of the lentils if they are introduced before the legumes are fully softened. It is best to add tomatoes or other acidic components after the lentils have completely cooked.

Using very old lentils

People often use old stocks of legumes. If the lentils have been stored for a long time, they may require more time to cook than usual. Even after thorough soaking and pressure cooking, old lentils may not reach the desired texture. Therefore, you should avoid buying very old batches and store legumes in a dry, airtight place.

Releasing pressure in the pressure cooker too quickly

After the lentils are cooked, some rush to forcefully release the pressure in the pressure cooker. However, it is better to allow the pressure to release naturally. This gives the lentils extra time to soften under the influence of residual heat.

What to do if the lentils are still hard?

If the lentils still seem slightly hard after cooking, you can add a little hot water and boil them for a few more minutes. Afterward, lightly mashing the lentils with a fork or spoon will help improve their consistency.
