Chef Ranveer Brar shares a recipe for crispy spring rolls that are easy to make at home

When people ask about their favorite dishes, Chinese cuisine is often mentioned, including items like noodles and chili-pot. Spring rolls are particularly popular, especially when one wants something other than samosas and pakoras with evening tea. These snacks feature a crispy outer shell and a spicy filling inside, pairing perfectly with tea, especially if the filling consists of crunchy vegetables and has a restaurant-quality taste.

However, when making spring rolls at home, problems often arise: the wrapper might tear, or the roll might not turn out crispy enough. In such cases, the recipe suggested by Chef Ranveer Brar can be very helpful. He details the entire process—from preparing a delicious vegetable filling to correctly rolling and deep-frying the spring rolls. By following the chef's method, one can achieve a result indistinguishable from store-bought ones.

Spring Roll Recipe:

First, you need to prepare the vegetable filling. Heat one tablespoon of oil in a pan or pot, sautéing finely chopped garlic and ginger and one green pepper until the raw smell disappears. Then, add half a cup of grated carrots, half a cup of finely chopped napa cabbage, a quarter cup of julienned bell pepper, and a quarter cup of julienned green beans. Sauté the vegetables lightly over high heat to maintain their crunch.

After this, add half a teaspoon of sugar, salt to taste, and half a teaspoon of ground black pepper to the mixture. Simmer the vegetables until semi-cooked, then add half a teaspoon of light soy sauce and cook for a few more seconds. Remove the finished filling from the heat and let it cool.

Next is the preparation of the wrappers. First, thaw the spring roll wrappers and cover them with a damp cloth so they do not dry out. In a small bowl, mix two tablespoons of flour with one tablespoon of water to create a thick paste. This paste will help securely seal the roll.

Take one spring roll wrapper, place one teaspoon of the prepared filling in the center. Fold the side edges of the wrapper inward, and then tightly roll the roll. Brush the final edge with the flour and water paste to hermetically seal the roll. Repeat the process for all the remaining spring rolls.

Heat oil in a pot and fry the finished spring rolls over medium or medium-high heat. Continue frying until the outer surface is golden and very crispy. Remove the fried rolls and place them on paper or napkin towels to drain excess oil. Serve them hot with chili sauce and soy sauce. Thus, crispy, aromatic, and delicious vegetable spring rolls can be made at home.
