Simple High-Protein Baked Broccoli is Suitable for a Weekday Dinner

If you are looking for a simple dish that is both filling and rich in protein, creamy broccoli and chicken casserole will be an excellent choice for a weekday dinner. This casserole combines tender chicken meat, fresh broccoli, Greek yogurt, and melted cheese.

When you crave something comforting, nutritious, and high in protein, but without long hours of cooking, this creamy dish is a real hit. It is a simple way to turn humble broccoli into a complete and satisfying meal. The chicken provides plenty of protein, while the broccoli adds fiber, vitamins, and a fresh taste. Furthermore, it is simple enough for a busy evening, yet substantial enough to satisfy hunger.

Ingredients

To prepare, you will need five hundred grams of diced chicken breast, two cups of broccoli, one cup of plain Greek yogurt, half a cup of shredded cheddar cheese, two cloves of minced garlic, one tablespoon of olive oil, one teaspoon of paprika, half a teaspoon of mixed herbs, salt and black pepper to taste, a quarter cup of grated Parmesan, and two tablespoons of water.

Preparation

First, prepare the broccoli: bring water in a pot to a boil and cook the broccoli for three to four minutes until slightly tender but retaining its bright green color. Then drain the water and set the broccoli aside.

Next, prepare the chicken: heat the olive oil in a large skillet over medium-high heat. Add the diced chicken, paprika, mixed herbs, salt, and pepper. Cook for about six to eight minutes, stirring occasionally, until the chicken is fully cooked.

Afterward, stir in the minced garlic and cook for another minute. To make the dish creamy, reduce the heat and add the Greek yogurt along with two tablespoons of water. Stir until the chicken is coated in a creamy sauce.

Combine all ingredients: add the broccoli and gently mix all components. Transfer the resulting mixture to a baking dish. Sprinkle with cheddar and Parmesan cheese on top.

Baking: Place the dish under a preheated broiler for three to five minutes or bake at two hundred degrees Celsius for about ten minutes, until the cheese is melted and golden brown. Let the casserole cool slightly before serving. It can be eaten on its own or with a simple salad for an even more filling meal.
