As the last Monday of the month of Sawan arrives, millions of people worship Lord Shiva and observe a fast. During such fasts, simple boiled potatoes are often eaten, which can seem dry and tasteless. If you want to add something brighter and more flavorful to your fasting diet, it is recommended to prepare a special crispy potato snack for the fast.
This potato snack, made from clarified butter, fried peanuts, green pepper, rock salt, and lemon juice, is not only very tasty but also cooks very quickly—in just 5-10 minutes. It can be eaten as a tea snack during the fast or with radjira or kuttu flatbreads.
Ingredients
For preparation, you will need:
- Boiled potatoes — 4 (cut into small square pieces)
- Clarified butter (desi ghee) — 2 tablespoons
- Peanuts (raw) — 2 tablespoons
- Makhana (optional, for extra crunch) — 1/2 cup
- Green pepper (thinly sliced) — 2 pcs.
- Ginger (grated) — 1 teaspoon (optional)
- Rock salt (fasting salt) — to taste
- Amchur powder or Anardana powder — 1/2 teaspoon (optional)
- Lemon juice — 1 tablespoon (optional)
- Cilantro (finely chopped) — 2 tablespoons
Cooking Method
First, heat 1 teaspoon of clarified butter in a pan. Add the peanuts and makhana and fry over low heat for 2-3 minutes until they become crispy. Then, transfer this mixture to a plate.
Next, add the remaining 1 teaspoon of clarified butter to the same pan. As soon as the butter heats up, throw in the green pepper. After that, add the thinly sliced green pepper and grated ginger and fry for 30 seconds.
Then, add the cut boiled potatoes to the pan. Set the heat to medium or high, and constantly stir the potatoes for 3-4 minutes without a lid, until the outer part of the potatoes acquires a light golden and crispy coating.
When the potatoes are well fried, add the rock salt and amchur powder. Mix all the spices thoroughly with the potatoes so that they are evenly coated.
After that, mix in the previously fried peanuts and makhana and stir for another minute over low heat. Then turn off the heat. Finally, sprinkle the dish with fresh lemon juice and finely chopped cilantro, mixing all ingredients thoroughly.
