As the holy month of Savan approaches its end on the last Monday of the following days, many people will observe a fast. If you plan to purchase any sweets for offering during prayer or as part of a fruit ration, you should refrain from buying ready-made sweets in stores.
There is an increased risk of adulteration with low-quality ingredients in sweets sold during holidays and Savan, which can negatively affect health. Therefore, it is recommended to avoid such store-bought products and prepare a pure, homemade granulated halva from kuttu flour in just 10 minutes, using only natural clarified butter.
Kuttu flour is rich in nutrients that provide immediate energy during fasting. Below is a simple recipe for granulated halva from kuttu flour.
Ingredients
You will need:
- Kuttu flour — 1 cup
- Clarified butter (desi ghee) — 1/2 cup
- Sugar or desi khand — 3/4 cup
- Water (warm) — 2 cups
- Almonds and cashews (chopped) — 2 tablespoons
- Green cardamom powder — 1/2 teaspoon
- Moti (lightly roasted) — 8–10 (optional)
Preparation Method
In a thick-bottomed pot, pour the clarified butter and heat it over medium heat. Add the chopped almonds, cashews, and moti, fry for about a minute until lightly golden, then remove them to a separate bowl.
Into the remaining oil in the pot, pour 1 cup of kuttu flour. Reduce the heat to minimum and stir constantly, roasting the flour until its color darkens slightly and a earthy aroma appears. It is important to stir continuously, as kuttu flour burns very quickly.
After the flour is well roasted, gradually pour in 2 cups of warm water, continuing to stir the pot with the other hand to prevent lumps from forming.
When the flour has fully absorbed the water and the halva begins to thicken, add the sugar and cardamom powder. After the sugar dissolves, the halva will become slightly thinner. Continue cooking over low heat for another 2–3 minutes until the halva starts to pull away from the sides of the pot and free oil appears on top.
Sprinkle the roasted nuts on top. The finished 'Kuttu Ka Danedar Halwa' is ready. It should be served hot as a fruit ration after offering to the deity Shiva.
