If you are tired of monotonous bhindi dishes, try preparing a spicy dish in the Andhra style. This recipe allows you to enjoy bhindi in a new, aromatic rendition that pairs perfectly with roti, paratha, or dal-chawal. Preparing this spicy dish does not require much time.
For preparation, you will need the following ingredients: 250 grams of bhindi, 4 tablespoons of oil, 2 medium onions, 2 teaspoons of coriander seeds, 1 teaspoon of cumin, salt to taste, 7-8 dried red chilies, a quarter cup of roasted peanuts, and 5-6 cloves of garlic.
The process begins by heating the oil in a pan. Simultaneously, lightly roast the coriander seeds and cumin in another pot without oil. Then, add the chopped onion to the hot oil and fry for about two minutes. After that, add the chopped bhindi and salt, mix thoroughly, cover with a lid, and let the bhindi cook.
Meanwhile, add the dried red chilies to the roasted coriander and cumin seeds and roast for a few more seconds. Next, stir in the roasted peanuts and garlic, and grind all of this in a blender until it forms a coarse paste. When the bhindi is fully cooked, add the prepared spice mixture and simmer it, stirring constantly, for 2-3 minutes so that the spices fully release their flavor into the bhindi.
After that, turn off the stove and serve the hot, spicy bhindi with roti, paratha, or dal-chawal. It should be noted that several important points must be remembered: after washing the bhindi, make sure to dry it thoroughly before cutting so that it does not become sticky; the spices should be roasted moderately, as excessive roasting can make them bitter; adding the coarse peanut powder will give the bhindi a special flavor and a light crunchy texture; the spiciness can be adjusted by changing the amount of dried red chilies according to your taste.
