Cambará do Sul Parador hosts themed weekend on Serrano cheese

Parador Cambará do Sul organized the event titled The Curious World of Cheeses, which will take place between August 21 and 23. This program is part of the hotel's calendar and aims to present guests with various aspects of the natural and cultural heritage of the Campos de Cima da Serra.

Serrano cheese, produced for over two hundred years using raw milk and traditional methods maintained by local families, is a gastronomic symbol of Southern Brazil. This know-how gained national recognition in 2020 by receiving Geographical Indication (GI) status under the Designation of Origin (DO) modality, making it the first Brazilian cheese to achieve such certification.

One of the central focuses of the event is the Campo Nativo Cheesery, located within the Parador, which houses the only Serrano Cheese Maturation Center in Brazil. During the immersion, participants have the opportunity to follow the entire production cycle, from artisanal manufacturing to the various maturation phases, observing the transformations in aroma, texture, and flavor.

On Friday, the program begins with a welcome cocktail featuring sparkling wines, cheeses, and live music. Subsequently, the Alma RS restaurant will host a harmonized dinner, prepared by resident chef Vladimir Paiva and guest chef Carlos Kristensen, presenting a menu focused on different applications of Serrano cheese. The meal will be complemented by wines, sparkling wines, and waters selected by sommelier Gustavo Buske.

On Saturday, guests can participate in an outdoor workshop on Serrano cheese production, where they will make a fresh piece and taste different stages of maturation. There will also be a guided tasting by Danilo Gomes, an artisan cheese specialist, including pairings with honey and an experience dedicated to traditional cambona coffee, prepared with embers, replicating the custom of old drovers.

In addition to cuisine, the history of the food will be explored through a reenactment depicting drovers, mules, and typical camps. This representation illustrates how Serrano cheese and charque were transported during the crossings of the Campos de Cima da Serra, helping to situate the relevance of these food items to the region.

The Parador's country barbecue, served on Wednesdays and Saturdays, is also part of the agenda. If weather conditions permit, lunch will be held next to the property's waterfall. The event will conclude on Saturday evening with a fondue, prepared with various types of Serrano cheese and other artisanal products, accompanied by creations from the chefs.
