- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 cup white sugar
- 2 large eggs
- Juice of ½ a lemon
- Zest of ½ a lemon
- ½ cup milk
- ⅓ cup melted butter
- 1 cup fresh blueberries
- 1 tablespoon flour
- A pinch of salt
Instructions
Preheat the oven to 180°C (350°F) and line a muffin tin with parchment paper. In one bowl, whisk together the flour, baking powder, and salt. In a separate bowl, mix the melted butter, eggs, and milk. Add the lemon juice and zest and whisk until smooth.
Slowly pour the wet mixture into the dry ingredients, stirring until everything is combined and no visible traces of flour remain. If the batter seems too thick, add another one or two tablespoons of milk. Rinse the blueberries and dry them thoroughly. Place the berries in a bowl with one tablespoon of flour and gently toss to coat them in flour. Then add the blueberries to the muffin batter, taking care not to add extra flour, and gently fold them in.
Pour the batter into the prepared muffin tin and level the top. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly, loosely cover the muffins with foil for the remaining baking time or move them to the lower rack of the oven. Let the muffins cool in the tin for about 30 minutes before slicing.

Mixing the blueberries with a small amount of flour before adding them to the batter is a helpful step when making fruit muffins. This helps distribute the berries more evenly throughout the batter instead of them all sinking to the bottom. Additionally, smaller pieces of blueberries are less likely to sink.
