Kathiyawadi Yogurt and Onion Dressing Recipe: A Quick and Tasty Dish

When there are no suitable vegetables in the refrigerator, the question arises of what to cook for lunch or dinner. In such cases, you can prepare Kathiyawadi yogurt and onion dressing, which cooks very quickly. This dish pairs well with both bread and rice.

In hot weather, one does not want to spend much time in the kitchen. If fresh vegetables are unavailable, this simple and delicious dressing from yogurt and onion, characteristic of the Kathiyawad region near Gujarat, can be prepared. It does not require much preparation time and can be served with either bread or rice. This homemade spice dressing from Kathiyawad is indispensable, provides refreshment, and is considered light, nutritious, and easy on the stomach, which is why it is often eaten in Rajasthan and Gujarat.

Chef Harpal Singh shared the recipe for this Kathiyawadi-style dressing, making it easy to prepare at home by following the step-by-step instructions.

Making the Yogurt and Onion Dressing

First, mince the garlic and red pepper in a food processor. Simultaneously, heat vegetable oil in a pan. In a separate bowl, mix salt with yogurt, and thoroughly stir the mixture, setting aside the chopped green dill.

After heating the oil, sauté asafoetida, cumin, fenugreek, and then add karipappa. Once the karipappa is lightly fried, add the onion and sauté it until it turns light pink. Then, add the prepared garlic and red pepper paste to this mixture.

Next, incorporate coriander powder, turmeric, and chaat masala into the mass, after which everything is roasted over low heat. After some time, take two onions, chop them coarsely, and fry them in this spice base for three to four minutes. After that, the onion sauce is added to the yogurt and mixed thoroughly. Finally, the dish is garnished with fresh herbs.

For serving, remember that the yogurt must always be fresh and slightly sour, as this significantly improves the taste of the dish. It is important not to mix the yogurt with the hot onion mixture; the mass must first be cooled down slightly before adding the yogurt to prevent the yogurt from curdling.
