With the arrival of the months of Sawan and Bhadrapada, festive celebrations begin across the country. Whether it is sweets to delight brothers during Raksha Bandhan or offerings to Lord Krishna during Janmashtami, homemade baked goods hold special significance. If you want to prepare something pure, nutritious, and delicious with minimal time and effort during this festive season, mkhana pag is an ideal choice.
Mkhana is not only very healthy but is also considered a suitable sweet for fasting. Below is the simplest instruction for preparing crispy and tasty 'Mkhana Pag' from regular mkhana that is stored at home to be as delightful as a professional confectioner's.
The following ingredients will be needed: 2 cups of mkhana (lightly crushed), 1/2 cup of grated dry coconut, 2 tablespoons of crushed cashews and almonds, 1 tablespoon of pumpkin seeds (magaj), 1 cup of sugar, 1/2 cup of water, 2 tablespoons of ghee, and 1/2 teaspoon of ground cardamom.
Roasting Mkhana and Nuts
Heat 1 tablespoon of ghee in a saucepan. Roast the chopped cashews, almonds, and pumpkin seeds over low heat until lightly golden, then remove them. In the same pan, roast the dry coconut for one minute, ensuring it does not burn. Then add the remaining oil and roast the mkhana over medium heat until completely crispy. After cooling, crush the mkhana by hand or in a blender (in pulse mode) into coarse crumbs.
Making the Sugar Syrup
In another saucepan, mix 1 cup of sugar and 1/2 cup of water and place it on the heat. After the sugar dissolves, boil the mixture for 3-4 minutes to obtain first-degree syrup. (The syrup is ready when it sticks between the thumb and index finger). Add the ground cardamom to it.
Mixing Ingredients
Reduce the heat to the lowest setting and add the roasted mkhana, coconut, and all types of nuts to the syrup. Mix well and cook, stirring, for 1-2 minutes until the syrup completely coats the nuts and mkhana.
Shaping the Pag
Grease a plate with a small amount of ghee. Immediately pour the prepared mixture onto the plate and spread it evenly, pressing with a spatula. When the mixture becomes slightly warm, cut desired shapes (square or burfi-shaped) with a knife. After it cools completely, separate the mkhana pag pieces. Your crispy and tasty mkhana pag is ready to eat!
