Today we will tell you how to prepare crispy fried bandhi with rice flour, which can be easily made at home. This dish, coated with rice flour and spices, turns out crispy on the outside and soft on the inside.
Bandhi is a vegetable dish that many people like. If you are tired of the same old bandhi dish and want to try something new, fried bandhi with rice flour will be an excellent option. Thanks to the rice flour coating (soji), it acquires a special taste and a crispy texture. It can be eaten as a main course for lunch or dinner, or as a snack with evening tea.
For preparation, you need: 10 bandhis, 1 teaspoon of Kashmiri red pepper powder, ½ teaspoon of turmeric, ½ teaspoon of amchur powder, a pinch of asafoetida, 1 teaspoon of ginger and garlic paste, ½ teaspoon of salt, ½ cup of rice flour (soji), 2 tablespoons of oil.
First, the bandhis must be thoroughly washed and cleaned. Then they should be well dried with a towel to remove all moisture. After that, the bandhis are cut in half lengthwise, trimming the edges.
In one bowl, mix the Kashmiri red pepper powder, turmeric, amchur powder, asafoetida, ginger and garlic paste, and salt. Add the sliced bandhis to this mixture and coat them thoroughly in the spices. Next, pour in the rice flour and gently mix so that the bandhis are evenly covered with the spice and flour mixture. To allow the aromas to penetrate the bandhis well, leave them for 20–30 minutes.
After that, heat 2 tablespoons of oil in a frying pan. When the oil is hot, place the rice flour-coated bandhis in the pan one by one. Cook the dish under a lid over medium heat for about 5 minutes. Then remove the lid, flip the bandhis, and cook until done over low heat, frying on both sides. As soon as the bandhis becomes golden and crispy, turn off the heat.
The finished hot fried bandhi with rice flour can be served with dal and rice, or enjoyed as a light snack during evening tea.
