Often, pieces of roti remain after meals at home, and people either eat them reluctantly or throw them away. However, these leftovers can be used to prepare many delicious and healthy dishes, one of which is appe roti. This snack is characterized by a light crispy texture on the outside and tenderness inside.
Adding vegetables significantly improves both the taste and nutritional value of this dish. Therefore, if you have leftover rotis, try this simple and quick recipe.
To make appe roti, you will need: 2 stale rotis, 1 boiled potato, 1 onion (finely chopped), 2 green peppers (finely chopped), 1/2 cup of boiled peas, 1 carrot (grated), 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red pepper powder, 4 teaspoons of oil, a little finely chopped cilantro, salt to taste. If necessary, you can add 1-2 tablespoons of water or yogurt.
To begin, take the stale rotis and crumble them into small pieces. Then, blend them in a blender until they reach a coarse crumb consistency and transfer them to a large bowl. After that, add the mashed boiled potato, finely chopped onion, grated carrot, boiled peas, and green pepper, and mix thoroughly.
Next, stir in the turmeric, red pepper powder, salt, and finely chopped cilantro. If the mixture seems too dry, add 1-2 tablespoons of water or yogurt and mix well. Then, grease your hands with a little oil and form small balls from this mixture, about the size of a lemon.
Heat an appe pan on the stove and add 2-3 drops of oil to each cavity. Place the prepared balls in the pan and cover with a lid, cooking over low heat for 2-3 minutes. When the bottom side becomes golden and crispy, flip them over. Add a little more oil if necessary and fry on the other side until golden brown.
The hot appe roti is served with green, coconut, or tomato paste. It is important to remember a few things when cooking: do not crush the rotis into a very fine powder to maintain a good texture; the mixture should not be too dry or too wet; always cook the appe over medium heat so they become crispy on the outside and cook through inside.
