Next is the preparation of the sugar syrup. The saffron strands are soaked in a small amount of water. In a saucepan, heat the sugar along with slightly more water than one cup, and bring it to a boil. After the sugar dissolves, simmer the syrup for another 2-3 minutes. To check the syrup's readiness, drop it between your thumb and index finger; if it is slightly sticky, like honey, the syrup is ready. Then, add the soaked saffron to it and turn off the heat.

For frying the jalebis, heat the ghee in a deep pan. Pour the prepared dough into a jalebi mold, sauce bottle, or a thick plastic bag, making a small hole at the bottom. Shape the jalebis in the hot ghee by rotating them in a circle. Fry in batches so they fit comfortably. Fry over medium heat until golden brown on both sides.

The finished jalebis are immediately dipped into the prepared syrup and left there for about 2 minutes. After this, they are removed and placed on a plate. The process is repeated with all the remaining jalebis.

Several important points to consider: the mawa must be fresh and soft, as this ensures the smoothness of the dough. If the dough starts to spread when dropped into the ghee, it can be thickened slightly by adding a little more flour and beating thoroughly again.
