During the holy month of Sawan, millions of devotees observe a fast on Monday to earn the grace of Lord Shiva. During such fasts, people often consume fried dishes like kuttu puri, pakora, or fried potatoes, which can lead to stomach heaviness and acidity.
If you are looking for a light, healthy, low-fat, and tasty alternative for the Sawan fast, Kuttu ka Thepla is an ideal choice. This bread is made from boiled potatoes, green peppers, rock salt, and fresh coriander, has a very soft texture, and is easy to roll out.
Paired with a succulent vegetable curry for fasting days and whipped cold yogurt, this thepla turns out so delicious that it will satisfy you and provide energy for the whole day. Below is a simple instruction on how to prepare this dish.
To make Kuttu ka Thepla, you will need: 1 cup of kuttu flour, half a cup of singhada flour (optional, for binding), half a cup of boiled and grated potato (for binding and softness), 2 sliced green peppers, 1/2 teaspoon of grated ginger, 2 tablespoons of finely chopped coriander, rock salt (fasting salt) to taste, 1/2 teaspoon of black pepper powder, 1/2 teaspoon of cumin, as well as ghee or peanut oil for frying and hot water as needed.
In a large bowl, mix the kuttu flour, grated boiled potato, green pepper, ginger, coriander, rock salt, black pepper, and cumin. At this stage, you can add some singhada flour for better binding, and the potato can be omitted. First, thoroughly mix the potato and flour without adding water. Then, gradually add 1-2 tablespoons of warm water to knead a soft dough. It is important to start cooking the thepla immediately after kneading the dough, without letting it rest.
Form small balls from the dough. Roll them into thin flatbreads using a rolling pin, using dry kuttu flour or parchment/plastic wrap. Heat a skillet over medium heat and place the theplas on it. Fry on both sides until lightly browned, then brush with a small amount of desi ghee or peanut oil and continue frying until golden and crispy.
