Potatoes can serve as more than just a side dish. By adding a generous filling to baked potatoes, they can be transformed into a standalone main course. These three recipes use this approach, offering different variations.
The recipes presented include one with roast beef and creamy garlic sauce, another with twice-baked potatoes, mushrooms, bacon, and cheese, and a third option with meat chili, which is excellent for using leftover chili.
The main idea is simplicity: bake the potatoes until soft inside, slice them open, and fill them with your chosen stuffing. The final time in the oven allows the cheese to melt and all ingredients to combine.
To achieve the best texture, it is recommended not to wrap the potatoes in foil if you want a crispy skin. Instead, lightly brush the potatoes with oil and salt and bake them uncovered.
It is important to remember food safety rules: if you use foil, baked potatoes wrapped in foil should not be left at room temperature for long periods. Leftovers should be quickly refrigerated, not stored in foil.
Roast Beef Potatoes
This option is the most filling of the three. It features seasoned roast beef, creamy garlic sauce, and plenty of mozzarella stuffed into fluffy baked potatoes.

- 450g roast beef of your choice
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp garlic powder
- Salt and pepper, to taste
- Oil, for frying

- 2 tbsp butter
- 4–6 cloves of garlic, minced
- 1 tsp chili flakes
- 1 tbsp tomato paste
- 500 ml fresh cream
- Salt, to taste
Ingredients for Filling
- 1–2 tbsp butter
- Smoked paprika, chili powder, and garlic powder, to taste
- Salt and pepper, to taste
- ⅔ cup grated mozzarella
- ¼ cup sour cream
- Green onions or parsley, chopped, for garnish
Instructions
- Preheat the oven to 200°C.
- Prick the potatoes several times with a fork. Brush with a little oil and season with salt. Place on a baking sheet and bake for about 50–70 minutes, depending on size, until completely tender.
- While the potatoes are baking, season the roast beef with smoked paprika, chili powder, garlic powder, salt, and pepper.
- Heat a little oil in a pan over medium-high heat and fry the roast beef until golden brown and cooked to your liking. Remove from the pan and let it rest before slicing into thin strips.
- For the sauce, melt the butter in a saucepan. Add the garlic and chili flakes and cook briefly until fragrant. Stir in the tomato paste, then add the fresh cream. Season with salt and simmer slowly until the sauce slightly thickens.
- When the potatoes are ready, make a slit down the middle of each one and gently squeeze the sides to open. Scoop out some of the potato flesh into a bowl, leaving enough inside the skin to maintain shape.
- Mash the potato with oil, a little smoked paprika, chili powder, garlic powder, salt, and pepper. Mix in the mozzarella and sour cream.
- Spoon the filling back into the potato skins, top with the sliced roast beef. Drizzle with the creamy garlic sauce and return to the oven for 5–10 minutes, until heated through and the cheese is melted.
- Sprinkle with chopped green onions or parsley and serve immediately.
Twice-Baked Potatoes with Mushrooms and Bacon
Creamy mushrooms, crispy bacon, and melted cheese make this option an excellent choice if you want a hearty potato without a large piece of meat.
An important point is to cook the mushrooms until they are browned. If added to the potatoes while wet, the filling may turn out loose rather than creamy.

- 250g mushrooms, diced or sliced
- 250g bacon, diced
- 1 tbsp butter
- 2 cloves of garlic, minced
- 250 ml cream for cooking
- 1 tsp paprika
- 1 tsp onion powder
- 1 cup grated cheese
- Extra cheese, for sprinkling
Instructions
- Preheat the oven to 200°C.
- Brush the potatoes with oil and season with salt and pepper. Place on a baking sheet and bake for about 60–75 minutes or until tender when pierced with a knife.
- Meanwhile, fry the bacon in a pan until crispy. Remove and set aside.
- Add the mushrooms to the same pan and cook until nicely browned. Add the butter and garlic and cook for another minute.
- Pour in the cooking cream and season with paprika, onion powder, salt, and pepper. Simmer slowly until the sauce slightly thickens. Set aside some of the mushroom sauce and bacon for serving.
- Once the potatoes are ready, make a slit along the top of each one and carefully scoop out most of the flesh, keeping the skin intact.
- Mash the potato pulp with butter, cream, mushrooms, bacon, and grated cheese. Season to taste.
- Spoon the mixture back into the potato skins, sprinkle with extra cheese.
- Bake at 180°C for about 20 minutes, until the cheese is melted and starting to bubble.
- Garnish with the reserved mushroom sauce and bacon before serving.
Chili and Cheese Potatoes
If you have beef chili simmering on the stove, this is an easy way to turn it into a complete meal. Chili can also be made specifically for potatoes, and leftovers can be served with rice the next day.

- 1 kg ground beef
- 1 onion, diced
- 2 red peppers, diced
- 2 cans (400g each) crushed tomatoes
- 400g kidney beans, drained
- 2 tbsp tomato paste
- 6 tsp oil
- 2 handfuls of mozzarella

- 2 tsp chili powder
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper, to taste
- 200 ml water
Instructions
- Preheat the oven to 200°C.
- Prick the potatoes with a fork and place them on a baking sheet. Lightly brush with oil and season with salt. Bake for about 50–70 minutes or until tender in the center.
- While the potatoes are cooking, heat a little oil in a large pot. Add the onion and red pepper and cook for 5–7 minutes until softened.
- Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
- Stir in the tomato paste, chili powder, smoked paprika, cumin, oregano, and garlic powder. Cook for 1–2 minutes.
- Add the crushed tomatoes, kidney beans, and 200 ml of water. Season with salt and pepper, then reduce heat and simmer for 25–30 minutes, stirring occasionally, until the chili thickens.
- When the potatoes are ready, make a deep slit down the middle of each one and carefully open. Add a little oil to each potato and mash the flesh with a fork.
- Spoon the hot chili over the potatoes and generously sprinkle with mozzarella.
- Return to the oven for about 10–15 minutes, until the cheese is melted.
- Serve immediately.
How to Improve Baked Potatoes
The potato itself is important. Choose large potatoes of similar size so they cook at roughly the same rate. For a crispy skin and fluffy center, bake them uncovered and allow enough time for them to cook completely.
Do not overload the filling with liquid. Creamy sauces should be thick enough to cling to the potato, not pool at the bottom of the skin.
And do not feel obligated to prepare a separate dish every time. Chili potatoes are especially useful for using leftovers, and the mushroom and bacon option can turn several everyday ingredients into a hearty dinner.
