Recipe for Crispy Sudji Rings
Sudji Rings are an excellent option for an evening snack if you are tired of usual samsas and khachuris. These rings, made from semolina, yogurt, and certain vegetables, turn out crispy on the outside and soft inside. They are convenient to eat with evening tea or when experiencing mild hunger. The advantage of this dish is that it requires minimal preparation time.
The following ingredients are needed for preparation: 1 cup of semolina (rava), 1/2 cup of yogurt, 1 teaspoon of ginger and green pepper paste, 1/2 cup of finely chopped vegetables (such as bell pepper, carrots, onion, and others), 1 teaspoon of Eno or baking soda, salt to taste, vegetable oil for frying, and water as needed.
The cooking process begins by mixing the semolina and yogurt in a large bowl. Then, add the ginger and green pepper paste, finely chopped vegetables, and salt. After thoroughly mixing all components, gradually add water to obtain a thick mixture. Cover this mixture and leave it for about 10 minutes so that the semolina has time to swell. After this time, the dough must be mixed well again, after which the Eno or baking soda is gently incorporated.
Next, apply a little oil to your hands, take a small portion of the dough, and shape it into a ball. Using a finger, make a hole in the center of the ball, giving it a ring shape.
