Rasmi Sabudana Paratha Recipe
To prepare Rasmi Sabudana Paratha, follow these steps. First, roast the sabudana in a pan over medium heat, stirring constantly, for about 3-4 minutes. When a light aroma starts coming from the sabudana, turn off the gas. After the mixture cools down a bit, grind it in a blender until it becomes a fine powder.
Next, grate boiled potatoes in a large bowl. Then, add the sabudana powder, fresh coriander, ginger, green chili, black pepper, cumin, and rock salt to the grated potatoes. All these ingredients are mixed thoroughly.
Master Chef Pankaj notes that after mixing all the components, you need to knead a soft dough, gradually adding water as needed. It is important to ensure that the dough does not become too wet or sticky.
After this, small balls are formed from the dough. Each ball is carefully rolled into the shape of a paratha. A hot skillet is heated, and the paratha is placed on it. The paratha is fried on both sides, brushed with ghee, over medium heat. When both sides turn light golden brown and the paratha is well cooked, it is removed from the skillet. The remaining parathas are prepared similarly.
