Bhindi, or okra, is one of the most popular vegetables in India and can be prepared in many different ways. The presented recipe allows you to easily prepare Masala Bhindi at home in a short time.
If you like bhindi but want to diversify your daily menu, you should try Masala Bhindi. This dish, made using onions, tomatoes, and spices, turns out tasty and cooks quickly. It is convenient to serve with roti, paratha, or rice.
The following ingredients are required for preparation: 300 grams of bhindi, 1-2 tomatoes, 1 large onion, 1/2 teaspoon of red chili powder, 1 teaspoon of cumin seeds, 1 teaspoon of coriander powder, 1 teaspoon of ginger-garlic paste, 1/4 teaspoon of amchur powder, 1/2 teaspoon of dried fenugreek, 1/4 teaspoon of chaat masala, 1/4 teaspoon of garam masala, a pinch of hing, vegetable oil as needed, salt to taste, and lemon juice if desired.
First, the bhindi should be thoroughly washed and patted dry with a clean cloth, ensuring there is no moisture on it, otherwise, the dish may become sticky. Then, the bhindi is cut lengthwise and set aside.
Next, heat 2 tablespoons of oil in a pot over medium heat. When the oil is hot, add the chopped bhindi and sauté lightly for a few minutes. As soon as the bhindi stops being slimy, remove it from the pot and set it aside.
Add a little extra oil to the same pot. Add hing, cumin, and ginger-garlic paste, frying for just a few seconds. After this, add the finely chopped onion and cook until golden brown. Then stir in the chopped tomatoes, mix well, and cook until the tomatoes are soft. Next, add red chili powder, coriander powder, garam masala, amchur powder, and salt, mixing thoroughly. If the mixture starts to dry out, add a little water and continue cooking until the oil begins to separate from the spices, which indicates that the marinade is fully cooked.
Now, add the sautéed bhindi to the pot and mix it evenly with the marinade. Sprinkle dried fenugreek and chaat masala on top. Cover the pot with a lid and cook over medium heat for about 5-7 minutes, stirring gently from time to time. When the bhindi is completely cooked, turn off the heat and add lemon juice at the end, mixing. The delicious ready Masala Bhindi is served hot with roti, paratha, or rice.
