During the holy month of Savan, there is often a desire to eat something sweet and invigorating during the fast. However, sweets made from mawa, dry milk, or regular milk require a lot of preparation time and are difficult to digest. If you want to quickly, deliciously, and healthily prepare something during Savan without extra hassle, soft sesame seed barfi will be an ideal choice.
This dessert is made with just two main ingredients, without using dry milk, milk, or complex syrup. Its taste is so delightful, and its texture is so tender that it will overshadow even kaju katli. Below is a very simple and secret recipe.
The following components are required for preparation: white sesame seeds (1 cup), dry milk (1 cup; if unavailable, half a cup of mawa is needed), sugar or jaggery (1 cup), ghee (1 teaspoon) for greasing the pan and adding shine, ground cardamom (0.5 teaspoon, optional), and silver foil (optional).
First, roast the white sesame seeds in a pot over low heat for 2-3 minutes until they become slightly golden. It is important not to overcook the sesame seeds, otherwise, the taste may become bitter. Then, cool the sesame seeds and grind them in a blender. During this process, use the pulse mode (stopping periodically) so that the sesame seeds do not start releasing oil, which would spoil the mixture.
After this, turn off the heat and add the dry milk to the roasted sesame seeds. If dry milk is unavailable, mawa can be used. As a last resort, chopped cashews, almonds, or melon/watermelon seeds can be added.
In a separate pan, take 200 grams of sugar, which corresponds to one cup according to the measuring cup. Add half a cup of water to it and boil the syrup until it reaches a translucent consistency, meaning it should not be too sticky. If you are making syrup from jaggery, you simply need to melt it over low heat, without turning it into a syrup. As soon as the jaggery melts, turn off the heat.
Add the ground cardamom to the resulting sugar syrup or melted jaggery and mix thoroughly. After that, add all the prepared sesame seed mixture to the syrup. Then, grease a plate or baking tray with a small amount of ghee, pour out the ready mixture, and spread it evenly using a spoon or the back of a cup.
When the mass cools down a bit, it can be cut into the desired shape (diamond or square). After it cools completely, you get a tender sesame barfi that melts in your mouth.
