From September 23rd to 27th, Trancoso will host the seventh edition of the Organic Festival, an event that integrates gastronomy, tourism, culture, and sustainability through an agenda of 27 activities. Over five days, the public will have access to lunches, dinners, debates, workshops, trails, and various experiences, many of which are offered free of charge.
In this edition, 54 guests have been confirmed, with 26 of them participating in the festival for the first time. Among the highlights are Pía León, chef at Kjolle and winner of Best Female Chef in the World by World’s 50 Best Restaurants in 2021; Roberta Sudbrack, who has served as the festival's patron since its debut; Janaína Torres, elected Best Female Chef in the World in 2024 by 50 Best; and Nello Cassese, executive chef at Copacabana Palace.
Colombian Jaime Rodríguez (Celele), known for valuing Colombian Caribbean cuisine, will also participate, along with Ieda de Matos (Casa de Ieda), Fernando Bouzan (Blaise), José Solon (Gero), Kaywa Hilton (Boia), Lídia Sá (Lina Cozinha), and Rafa Brito (The Slow Bakery).
More than half of the program is free, including all lectures and debates, as well as traditional events such as the picnic in the Historic Square, Sunday caruru, and the closing luau featuring singer Céu. Dinners hosted by the guest chefs require direct reservation at participating hotels and restaurants. The concept of the festival is credited to Charles Piriou and the UXUA hotel.
The event kicks off with a special dinner hosted by Nello Cassese at Casa La Torre, gathering chefs, guests, and sponsors.
Thursday begins with the 'Lunch of the Future,' prepared by Gabriela Barretto at UXUA Roça. In the afternoon, there will be a debate titled 'Regenerative Tourism,' bringing together specialists in tourism and sustainability. In the evening, the restaurant Almar will host Colombian chef Jaime Rodríguez for a dinner followed by a Latin party.
Friday's schedule includes a walk through the Atlantic Forest, lunch at Fasano Trancoso with José Solon and Vagner Souza, and the traditional Patroness Dinner, organized by Roberta Sudbrack. Throughout the day, there will be lectures covering topics such as biodiversity, regenerative tourism, sustainable fishing, Brazilian wines, and native ingredients, including a conversation between Pía León and Joana Munné on territory and biodiversity.
Rafa Brito will start Saturday with a workshop focused on artisanal baking. In the afternoon, one of the most emblematic moments of the festival will take place: the community picnic in the Square, open to the public and free of charge. In the evening, Morena Leite will share the kitchen with Kaywa Hilton, while Ícaro Rosa will conclude the gastronomic part of the day at the Muru restaurant.
The festival farewell begins with a caruru prepared by Lídia Sá, followed by lunch by Dona Jandira and Fernando Bouzan. The closing will take place at UXUA Praia Bar, with a free luau featuring food from Ieda de Matos, a pocket show by singer Céu, and musical performances by Millos Kaiser and Gui Scott.
Throughout all the festival days, the São João Batista restaurant will offer pizza nights using recipes created by the guest chefs, serving as a regular meeting point for cooks, residents, and visitors.
