How to make Kesar Petha:
Ingredients:
- Pumpkin Petha (white petha/ash gourd): 1 kilogram (must be hard and fully ripe)
- Sugar: 600–700 grams
- Water: as needed (for syrup)
- Saffron threads: 1 teaspoon (soaked in 2 tablespoons of warm milk)
- Floral water or rose syrup: 1 teaspoon
- Lime (calcium carbonate): 1 tablespoon (to give the pumpkin hardness)
- Mole rat: 1 small piece
Preparation Instructions
Step 1: Cutting the Petha and Soaking in Lime Solution (Preparation)
First, peel the white petha (pumpkin), then remove the seeds and fibrous inner part. After that, cut the pumpkin into pieces of your choice—either square or rectangular. Take a toothpick and make holes in each piece of petha to allow the syrup to penetrate inside.
In a large container, prepare a solution by dissolving one tablespoon of food lime in 2 liters of water. Submerge the cut pieces of petha in this alkaline solution and leave them covered for 16 to 24 hours. After this time, thoroughly wash the pieces of petha 4–5 times with clean, fresh water to completely remove the lime smell.
Step 2: Boiling in Rat Solution
Bring enough water to a boil in a pot so that the pieces of petha can be freely submerged in it. Add a small piece of mole rat to the boiling water, and then place the washed pieces of petha into it. Boil over medium heat for about 10–15 minutes until the petha becomes translucent. Then, remove the pieces of petha from the water and place them on a strainer to drain excess liquid.
Step 3: Cooking in Sugar Syrup and Adding Saffron Aroma
In a pan, mix sugar and 2 cups of water, then place it on the heat to cook a thick syrup that should reach a consistency of approximately one level of viscosity. When the syrup starts to boil, add the boiled pieces of petha to it. Cook over low heat until the syrup is completely thickened and a white sugar glaze appears on the pieces of petha. After that, stir in the milk with soaked saffron, as well as the floral or rose water. This will give the petha a magnificent color and aroma.
