When daily consumption of the same dal and dried vegetables becomes monotonous, many people start ordering food from outside. However, such food is often expensive and unhealthy. To solve this problem, we offer a recipe for a spicy dish that is so delicious you will forget about ordering food.
Kathiyawadi Sev Tamatar, a dish from traditional Gujarati cuisine, is distinguished by its sweet and sour and spicy taste, thick sauce, and crispy sev on top. It is this unique combination of flavors that makes the dish special. Moreover, it is quite simple and very quick to prepare.
You will need:
- Thick sev (Gathiya or Ratla Sev) - 1 cup
- Tomatoes (finely chopped) - 4-5 medium
- Onion (finely chopped) - 1 large (optional, as traditionally many cook without onion)
- Garlic and ginger paste - 1 tablespoon
- Green chili (finely chopped) - 2
- Oil or ghee - 3 tablespoons
- Rai and cumin - half a teaspoon each
- Hing - a pinch
- Turmeric powder - half a teaspoon
- Red chili powder (Kashmiri) - 1 teaspoon
- Coriander powder - 1 tablespoon
- Garam masala - half a teaspoon
- Bosan - 1 teaspoon (for thickening the sauce)
- Kasuri methi - 1 teaspoon
- Fresh coriander (finely chopped) - for garnish
- Salt - to taste
First, heat the oil or ghee in a pot. Then add rai, cumin, and hing to prepare an aromatic base. After that, fry the finely chopped onion and green chili until golden brown.
Next, add the ginger and garlic paste and fry until the raw smell disappears. Then mix in turmeric, red chili powder, coriander, and salt, cooking the spices until they begin to release oil.
Add the chopped tomatoes to the pot and cook until the tomatoes are completely soft and the oil separates. At this stage, you can add one teaspoon of roasted bosan to give the sauce richness and thickness.
After this, pour in one and a half to two cups of water and bring the sauce to a good boil. When the sauce boils, add kasuri methi and garam masala.
About 1-2 minutes before turning off the gas, add the thick sev to the sauce and gently mix. It is important not to boil the dish for too long after adding the sev, otherwise, they will become soggy. Finally, sprinkle with finely chopped fresh coriander and serve hot Kathiyawadi Sev Tamatar with bajra, fulka, or paratha flatbreads.
