In hot weather, when you crave a refreshing dessert, many people think of kulfi. However, store-bought ice creams often contain chemicals and preservatives, which are not healthy. If you are tired of boring store-bought sweets, you can prepare a very tender and aromatic Matka Kulfi using only three ingredients available at home. Making this dessert is not only delicious but also simple.
Ingredients for the recipe
To prepare, you will need one liter of whole milk (to achieve a thick and creamy texture), half a cup of sugar (or to taste), and two or three slices of bread. The bread serves as a secret ingredient to give the milk a thick and creamy consistency. Additionally, you can use chopped dried fruits, such as pistachios and almonds, as well as cardamom powder.
Step-by-step preparation instructions
First, bring the whole milk to a boil in a thick-bottomed pot or pan over medium heat. After the milk boils, reduce the heat and let it thicken slightly, for about 5-7 minutes.
Preparing the bread mixture
Next, cut off the crusts of the white bread and grind the pieces in a blender until they reach a crumbly state. Then, gradually add this bread crumb to the boiling milk, stirring constantly to avoid lumps. After adding the crumbs, the milk will begin to thicken quickly.
Thickening to consistency
Add the sugar and cardamom powder to the thickening milk. Simmer the mixture for another 2-3 minutes until it becomes thick, like buttermilk. After that, turn off the heat and allow the mixture to cool completely to room temperature. At this stage, you can stir in the chopped almonds and pistachios.
Freezing and serving
Distribute the resulting creamy mass into small clay pots or kulfi molds. To prevent the formation of ice crystals, cover the molds with foil or plastic wrap. Then, place the dessert in the freezer for 7-8 hours or overnight. Take out the finished kulfi, garnish it with finely chopped pistachios on top, and enjoy it cold.
