Unlike french fries or mashed potatoes, this dish highlights the potato in its simplest form. It is affordable, easy to prepare, and can be topped with almost any filling, making it a versatile meal option for families looking for budget-friendly ideas.
To prepare, you need four large potatoes, two tablespoons of vegetable oil, one teaspoon of salt, and half a teaspoon of black pepper. Optional fillings include butter, grated cheese, stewed beans, chakalaku, minced meat prepared with onion and spices, chicken mayonnaise, tuna with mayonnaise and sweet corn, cream spinach, avocado, and chili.
The process begins with thoroughly washing the potatoes and cleaning off any dirt from the skin, after which they must be completely dried with a clean kitchen towel. It is important to keep the skin, as it helps create a crispy outer layer that gives the baked potato its unique flavor.
Next, season the skin. Each potato needs to be pricked several times with a fork. Then, rub the potatoes with oil and sprinkle with salt and black pepper. The oil helps the skin become golden and crispy, while the salt adds flavor.
For baking, preheat the oven to 200°C. Place the potatoes on a baking tray and bake for approximately 60 to 75 minutes, depending on the size. Doneness is determined by the crispy skin and the ease with which a knife enters the center.
After removing the potatoes from the oven, carefully cut them lengthwise. Then, gently squeeze the sides to open the potato, and mash the soft interior with a fork. After that, add butter, seasonings, and your chosen filling.
